Winning Hearts And Minds: Outreach Strategies for Curbside Organics Collection: NYC Case Study

Breaking down the OUTREACH STRATEGY

 

Q: You touched on some of your strategies in the last episode, but I’d like to really understand the whole process. Can you tell me how the DSNY went about planning and implementing these strategies?

BA: Entering into a pilot program for New York City is a big challenge, because you have so many different types of communities and people with so many different experiences living in different types of housing structures. So we really approached this pilot from the perspective of what’s been successful in other cities? Most other cities have lower housing density – in New York City sixty percent of our population live in high-rise apartment buildings.

So we started focusing on the lower density areas of the city. In those low density areas, we reached out to the elected officials and the local community organisations to get feedback. Part of the strategy was to look within at sanitation and our sanitation workers know best what is happening on the ground – what neighbourhoods tend to be good recyclers already, and what neighbourhoods they think would be more amenable to doing a pilot program. Based on that, we chose a few committees; we reached out to elected officials; we talked to the local community organisations; and we tried to identify those “informal mayors” of neighbourhoods that might have their finger on the pulse of the community, to get feedback on if they think it would be successful in that neighbourhood and where the challenges might be.

Based on all of this information, we finalised our initial list of pilot areas, and then we sent a mailer to the households in the neighbourhoods about a month before the program was to start. Then we followed that up with a door-to-door door hanger that explained the program and that in a week they were to receive a brown organics bin, a kitchen container and information about the program. And then, when we do the bin deliveries – the organics bin, kitchen container and information packet – we have outreach people there during bin deliveries to talk to people on the ground; if somebody comes out and they have a question, we answer it. During those periods, we’ve encountered people who are just so excited about the program, and we’ve also encountered people who say “this really isn’t for me”. So we really try to change hearts and minds, and having people on the ground, and face-to-face communication, has been critical to getting people to even try the program.

We say that it’s a voluntary program, that you won’t get fined for not participating, but we encourage you to participate, and this is why: your going to help reduce the materials that we send to landfills that potentially could save taxpayer money, you could reduce incidences of rodents in the neighbourhood; it creates a cleaner waste stream for you, because you’re separating out the stinky stuff from the rest of your garbage. So, that on the ground, face-to-face, has been critical. It’s resource intensive, but it really has been extremely helpful to get the program off the ground in the beginning.

We also try to get articles in local newspapers – like the Daily News, New York Post, New York Times, if they’re interested – and then we have the local neighbourhood newspapers, and those have also been really helpful to explain that the scheme is coming to this neighbourhood, and that this is what it looks like, this is where you go for questions, this is our website… So they’ve been really helpful to get the message out.

Q: This strategy mirrors the strategy we lay out in Lesson 4 of our online course when we speak about outreach – that you need to let them know about the program initially around a month beforehand, and then have people going door-to-door to answer questions when the bins are delivered. And that’s exactly what you did, so it’s a very extensive campaign.

BA: Yeah, we’ve built email lists and newsletters, and any opportunity we can find the get the information to the local community, we use it.

 

 

Compost COMMUNICATION for different DEMOGRAPHICS

 

Q: Since there are so many different demographics in New York City, did you have different approaches that you used for the different groups of people?

BA: We had our standard approach, but in certain neighbourhoods, we had people on the ground who spoke the language. We had a Spanish speaker, a Chinese speaker, we also had a few neighbourhoods where Russian was an important language. So we had people on the ground so they’d have that specific face-to-face opportunity to speak with somebody in their own language. We also translated some of our materials – the most critical pieces of information – into multiple languages, and you can translate our website, so that’ been very useful as well.

One thing we have discovered is that, especially if you’re in an area that has a lot of retired people, we can’t rely on the web or social media as our only information portal. So, we have a hotline and utilise the city’s 311 program, and we have a lot of soft responses to the most common questions that we get. So we’re able to utilise phone calls as well as an opportunity.

 

 

Getting RESIDENTS started and using COMPOSTABLE plastic bags

 

Q: What were the most common questions that you got, or the most common issues that people had?

BA: We get a lot of questions like “is this mandatory, do I have to do it?” Because I think some people get the mailer and, even though it says it’s a voluntary program, they assume that because it’s a notification from the Sanitation Department, they have to participate. We encourage people by saying “it’s not mandatory, but we encourage you to try, because this is a new strategy and we’re trying to see if we can make it work in New York City”. One of the strategies that we’ve recommended to people that using certified compostable bags is one way to collect the material inside your home and get it out to the brown bin in a way that’s more similar to maybe what you used to do if you used plastic bags for garbage.

The availability of those compostable bags has been a problem. It’s taken us a while to get the bags into retail stores – there are also online outlets for the bags. The price of the bags has been a problem; some people say the bags are to expensive and they won’t use them, or that they would participate in the program if they could use the bags, but the bags are too expensive – that’s an example of something that’s been a challenge. We do say that you don’t have to use compostable bags: you can use paper bags, and you don’t even have to line your kitchen container at all if you don’t want to, it just means you have to rinse it out. And with the brown bin, you don’t have to line the bin if you have a way to rinse it out, or you can use paper bags or certified compostable bags. And this spring we’ve added that people can line their brown bin with a clear recycling bag. It’s not our preference to do this, but to encourage participation and because the compostable bags are not yet available everywhere, we are allowing people to do this to get people used to the program.

Our hope is that eventually the compostable bags will maybe become cheaper and be more available, and then we can switch out the regular plastic bags. One of the challenges with the plastic is that it doesn’t break down in the composting facility, so it adds to the contamination rate, but at this point we do think that it does encourage more participation because it’s more similar to our other recycling programs. In our recycling programs, you can use clear plastic bags, or you can put things directly in the bin, so it’s more parallel right now to those programs.

Q: So you’re thinking is that it’s more important to just get them on board and into the habit and then it’s easier to change…

BA: Right. There’s the challenge of the front end, which is participation, and then there’s the back end, which is trying to do something useful with the material. And we’re trying to balance those two things right now.

 

 

The most IMPORTANT aspects of an OUTREACH STRATEGY

 

Q: And in terms of strategy, would say that the face-to-face communication is the most important aspect?

BA: I don’t know if it’s the most important, but it’s a critical piece. I think getting articles in the media and generating a buzz…and we’ve been very lucky where the local television news media has picked up the program, the local neighbourhood newspapers have picked up the program; the city-wide newspapers have picked up the program and we’ve had radio shows pick up the program too. Having people hear repeatedly about the program has been absolutely critical.

Then, once an area becomes a pilot area where people are receiving the program itself, the on the ground outreach has been extremely useful. Not everybody reads the mailers: if you receive a mailing from the city, it might end up directly in your recycling bin – hopefully your recycling bin! And so, having people out there on the ground during bin deliveries to really make sure people understand the program is important. The elected officials and community boards have also often hosted meetings where people can come and ask questions.

I think what’s critical is that you try to hit every outreach opportunity that you can, because you never know who might be listening in which venue. And the bigger the program goes, the more difficult it will be, because of the more neighbourhoods we’ll have, and we’ll have to be really efficient in how we implement the process, because we won’t necessarily have an army to be in every neighbourhood all the time.

Q: And since you are planning to expand, is there anything you’re gearing up for, or planning, in terms of outreach campaigns for when the program does go city-wide?

BA: So this year, we’re working through the analysis to figure out if we are able to expand this program, and really think about it as a program that we’re going to expand city-wide – we’re working on this right now. So, we have plans to further expand in the spring to another, approximately, forty-thousand households. And this fall, we’re aggressively trying to recruit more multi-unit buildings to really understand the challenges to making this work in multi-unit buildings.

Then, next summer of 2015, we will start writing up our analysis and provide the city-wide expansion plan. In the end, when we expanded recycling, we started recycling in portions of the city and then expanded city-wide, we took a geographic strategy, where we said “now we know we’re going to go city-wide, let’s phase in each area of the city”. It is likely that that would be a useful tactic also for this type of a program once we expand it city-wide. But we haven’t yet crunched all the numbers to understand exactly how quickly it would happen and who would start first – those types of things.

 

 

The TROUBLE with high-rises

 

Q: Since you brought up high rises, I want to ask, what was your experience in dealing with the building owners and supers – were they on board right away, or was it hard to convince them to change?

BA: We’ve been lucky at this point because we’re recruiting buildings, and they are voluntarily saying to us that they would like to join this program. I would say one of the most interesting things to date is that it’s the co-ops and the condos – the buildings where people own their units – that tend to be much more interested in the program than the building management companies for rental buildings.

Where you have a co-op board, the co-op board president is perhaps the champion of the program, they’ve really been successful in getting buildings on board and participating, and committing to manage the program in their building. Where we have a resident of a rental building contact us, we then contact the building management company, and more often than not, the building management company says “I know this resident is interested in the program, but I don’t think I have the resources to manage it”. So we’re really working this fall to see if we can get more rental buildings on board to understand what the constraints are for a rental building as opposed to an owner building.

 

 

Residents reaction to the collection program

 

Q: In general now, how has the reaction been from the participants of the scheme so far, has it been mostly positive, or have there been any comments on it?

BA: It’s mixed. I would say you have the core group of residents that are really into the program; they’ve jumped on board and have given us feedback like, “I have no trash left!” and things like that. You do have, I would say, a significant set of residents who’ve chosen not to participate, and that’s the group that we’re really trying to recruit now. So we’re going back into the pilot areas and saying “you know, this really is beneficial and will make your trash management cleaner”, and things like that.

But we really have a mix. The people who participate are gung-ho about participating and enthusiastic, and then you have folks who are really choosing not to. It’s interesting when you look at the numbers; we have RFID tags attached to the brown bins, so when we go and collect, we’re able to see how many bins are placed out on each collection route and are able to get a sense of participation, which is really helpful for the pilot program. And what we’re finding is that there are some people who started in the program, and then they dropped out, or they dropped out in the winter and they came back again in the spring – and so you can see patterns there.

You also see, surprisingly, bins that had never been placed out for collection for three or four months, and then all of a sudden you see them being placed out for collection. So maybe that’s somebody who really wasn’t interested in the program and then saw their neighbours do it long enough that they said, “maybe I’ll five this a try”, or maybe they have a lot of yard waste and thought, “maybe I’ll use this for yard waste”.

So we’re trying to understand the patterns of behaviour. How do people behave with the program? Is there consistency with participation? It’s a pretty interesting analysis to understand people’s behaviour. And it’s a different thing from recycling – recycling is dry goods, so that “ick” factor doesn’t exist, whereas with organics it’s a little bit different. Yard waste is less scary than the food waste portion of course. But we have really great testimonials of people who say, “I really don’t have much garbage left, once I recycle and do the organics”.

Q: I often wonder about the people who start and drop out – what their reasons where. And it’s probably more difficult to get them back into the program again after that too.

BA: Yeah. And our feedback is that some people say “I had a free sample of compostable bags, and once those bags ran out, I tried to buy them and I couldn’t find them”, or, “they were too expensive.” So for those people, we tell them that they don’t have to use those bags, and list the other strategies we encourage them to try. There are some people then – it was a particularly tough winter last winter – and they said, “you know, I just didn’t want to do the program over the winter, but now that spring has arrived, I’m coming back.” It really is varying reasons.

 

Wise words of advice.

 

Q: And finally, do you have any advice on planning and implementing an outreach program, for those listening in who might be starting their own? Any pitfalls you want to warn against, or tips to share?

BA: If you have ideas of which communities you think you would like to start the program in, I would recommend having conversations with those local communities pretty early on. Give yourself at least a few months before the program starts to really start talking to that community, explain the “why” of the program: why are we doing this, and explaining how it would work. The more they feel a part of the development of the process, the better the response. I the very pilot area, we had a situation where certain people were told that this was going to be the pilot area before they were notified on a local level, and they felt a little bit slighted. So it was important for us, moving forward, to really get into those local communities. These are our candidate pilot areas: let’s get in there and talk to them and make sure they understand the program that’s coming. And then, when it comes, they’re not surprised. So having that up-front communication before the program starts would be an important piece.

I also think providing the tools – providing the bins and the kitchen containers – has been helpful. Giving them the tools so they didn’t have to go buy things right away was really helpful. In the initial pilot areas we had sample supplies of compostable bags so they could at least get themselves started, and that was also helpful.

NYC: Reaching True Sustainability With Community Composting

Where COMMUNITY COMPOSTING is today

 

Q: The community composting movement is growing strong in New York at the moment. The DSNY, for example, who started their NYC Compost Project in 1993 to support local composting programs, now support over 200 composting sites and 8 to 10 mid-size operations in the five boroughs, and the collection points for dropping off food scraps at greenmarkets are growing in number: over half of the greenmarket farmer’s markets are outfitted with a drop-off program.

As a long-time community composter currently working at Added Value Redhook Community Farm in Brooklyn, you’re right there on the ground watching all this happening. Can you give me a brief picture of what community composting looks like today?

DB: Quite a bit of it depends upon how you define community composting. There’s an awful lot of things going on in terms of community composting in the city; there’s quite a bit going on in terms of closing the loop, and a lot of that is in the community gardens around the city. Folks will bring their kitchen scraps to their community garden, where they get composted in small systems. What there’s less of is community composting that is defined not only as trying to close the loop as much as possible on organic material, but also engaging the public as much as possible, so that we can promote environmental stewardship.

Q: Community composting has had a long history in New York, hasn’t it?

DB: Community composting has been, to a degree, fairly strong in New York, because of the presence of community gardens around the city; New York City is unusual in having hundreds of community gardens. What’s new for community composting is adding in the public engagement, and trying to make sure that capacity grows more. The community gardens can take organic material to a degree, but at some point it’s just too much for them because their systems are usually quite small. So we’re trying to develop more sites that have bigger capacity and can take more organics.

 

 

New York Policy Makers Lack Strong VISION For COMMUNITY COMPOSTING

 

Q: In terms of a vision for community composting, many (including yourself) are in favour of small-scale, decentralised models that prioritise closing the loop, can you tell me what policy makers have in mind for community composting in the city?

DB: We haven’t yet seen a strong vision articulated by policy makers for the future of community composting. What I have experienced is more helping what already is happening. So, assistance for community gardens and things like that. The Department of Sanitation has been very helpful in terms of developing slightly larger sites that can take more material, but I haven’t seen a vision that essentially articulates where we want to be in the future twenty years from now.

Q: Why do you think that is? We know how challenging it is for them to coordinate all of the different aspects in such a large city, as well as rolling out such a large collection program.

DB: Perhaps they haven’t been challenged enough to realise that this is the sort of thing we will have to confront sooner or later, because, to me, there’s no way to get around the future in terms of closing the loop on the travel of organics. We will, sooner or later, have to find ways to make sure organics are not travelling large distances in order to be processed. We think that’s the kind of vision that has to be articulated at the policy level. And then, everything else comes along with it: even if we optimise community based composting as much as we can, because our cities in the US are so badly designed, there’s no question that we will also need curbside pickup as a municipal function; we’ll also need commercial composting. We’ll need all of those things.

What we’re not seeing is a vision that’s big enough and future-thinking enough to say that we have to optimise community based composting first and foremost, and then pull in all these other elements to best address the organics.

 

 

Community Composting In Practice

 

Q: Before we tackle the bigger issues, can you tell us more about how things work today with community composting: how are the organics are collected & processed?

DB: One of the most exciting things going on in New York City in terms of organics being collected is the farmer’s market collection program. It’s run by a group called Grow NYC, which has several green farmer’s markets around the city, and they have tables where folks can bring their food scraps from home, drop off their food scraps and then buy their food to take home, where they will make food scraps that then go back to the farmer’s market the next week. So it’s a wonderful, local cycle for the organics stream.

The food scraps are distributed to different sites around the city, within the city limits, one of which is where I’ve spent a lot of my time called the Red Hook Community Farm in Brooklyn, New York. And so we will be getting that material from farmers markets in the borough of Brooklyn, closer by. We also maintain tumblers so that community residents who can’t compost at home can walk their food scraps over and put them in the tumblers, and that material will wind up in our larger system over time.

Q: Do you see a lot of people participating in this, or is it gaining in popularity?

DB: It’s growing more and more popular as people hear about it. They’ve just passed the three million pound mark in terms of the collections they have done, so it’s to be quite big of a scale, and they seem to be adding new farmer’s markets every year. So that’s very exciting. Another exciting development is that the Department of Sanitation has begun to support the development of urban farms, and you’ll see a very similar type of magic happening, because at the urban farms they will often have farm stands where they sell locally grown, fresh produce right next to the fields where the produce is grown. So folks, when they come, will bring their food scraps. And this is what happens in Red Hook, Brooklyn, because folks will come and bring their food scraps, drop them off in our tumblers, and then buy some produce at the farm stand and go back home and create a very nice local circle – a closed loop for the organics.

Q: And how is the organic material typically collected from the farmer’s markets and urban gardens?

DB: Well at Added Value’s Red Hook Community Farm, the material is brought to us. So, local residents will walk it or bicycle the material from their homes. And then we get some of the scraps from the Grow NYC farmer’s markets, which is brought to us in plastic bins by a truck. The big difference is that it’s just travelling within Brooklyn, as opposed to having trucks drive on highways and downs streets. We have a smaller truck, as opposed to the bigger trucks that get loaded up and then have to drive outside the city for a distance to transport the material.

Q: One issue we often talk about with organics collection is the contamination rate, and the quality of the organics collected in New York has been described as pristine. Would you agree with that description? What has been your experience?

DB: Well I can’t speak for the city, but what I see happening is that, in terms of the material collected at the farmer’s markets, we’ve very, very clean material that’s being dropped off – in particular because the folks who go to the trouble of collecting their food scraps and bring them to the community sites once a week are very conscientious, and so our level of contaminants are extremely low.

 

 

Curbside Organic COLLECTION And COMMUNITY COMPOSTING – Can They Work Together?

 

Q: With the DSNY managing an ever expanding residential curbside collection scheme for NYC, can community composting be an integral part of the system, or are they at odds with one another?

DB: In my view they are in direct conflict and at great odds in some ways, and it depends upon the vision that is articulated for policy in a city. For example, when I started this work, I talked to some folks in Toronto, who were very active in trying to promote sustainability in regard to how organics were treated in the city. And they had a choice – they had to either support community composting and invest in it as much as possible, or invest their time in trying to develop curbside pickup. They chose curbside pick up, because they felt it could be a bridge to community composting, and they told me that the exact opposite happened.

Because they had never developed a culture of people trying to keep their organics as local as possible, once the curbside started, it was very challenging to get to that culture, because people could just put things on the curb, and they got into the habit of that. So now what they’re looking at is a much longer time-frame for persuading the public that it would be better for their organics to stay much closer to home because it’s more environmentally sustainable.

So in that way, Toronto shows that curbside municipal pickup and community composting can be at odds and in conflict, if there’s no vision of policy that says we need to be developing community composting as much as we possibly can, while at the same time we recognise that not everything can come to community based composting sites – we do also need curbside municipal pickup. But you see, that kind of vision doesn’t see them at odds. That kind of vision says: let’s do what’s most environmentally first, and develop community composting as much as we can,  and then recognise we also have to do curbside municipal pickup, as well as commercial composting. That’s different from what happened in Toronto where it seems it was posed as a choice, one or the other, and now my colleagues up there are saying it will take them so much longer to ever develop community based composting.

Q: That is something to bear in mind when developing policy. Now let’s move on and talk about the benefits of community composting. I’m sure you agree with me in saying that community composting schemes can really make an impact in educating people on organics recycling and the importance of keeping the stream clean?

DB: That’s true. One benefit is that unlike glass or plastic, or metal, it’s much easier for the public to participate in the process when it comes to processing the organics. They can’t as likely do that with glass, metal or paper, but with community composting, they can go very close to their home, contribute to the compost process, and – if it’s a type of a site that places a value on community participation – volunteer in making the compost with their own hands.

That has several benefits. One is that if the material is used in their community, they get much more invested in it, because they see that it’s going to be used for a local urban farm, or for street trees, or a food garden their local public school where kids attend. So there’s a much stronger connection to it, and more dedication and commitment.

But they also just care more about it in general. So one effect, if it’s optimised, is that people will care more about what they’re putting out on the curb as well. So, they may take some to community sites, but if they’re putting some on the curb for pickup, they know the importance of not having contaminants if they’re participated at a community compost site, so they’ll be more careful that way.

Q: On the note of education – how do you draw people in and get them interested?

DB: I’ve never found it hard. On the site at Red Hook Community Farm, as long as you post hours that are consistent – we put hours up on our website so people can check to see when they can volunteer – and we get in touch with the different volunteer groups to let them know what the opportunity is. Very quickly things take off, and the question is not so much, “how do we get people here?, it’s more about “oh, is that too many people?”, or “how do we best manage this so everyone can have a meaningful experience, given how many people are here?”

Q: That’s a great problem to have.

DB: It is, it’s a wonderful problem. But it just further demonstrates the importance of community composting – that there’s a hunger on the part of so many to participate in this type of work.

 

 

Job Creation In Small-Scale COMPOSTING Projects

 

Q: For those out there that might not be convinced of the importance of community composting yet – can you tell us some more benefits you’ve seen?

DB: At the top of the list, it’s better for the environment. It reduces environmentally costly transport by so many trucks on the streets. It better supports local food growing, and it also supports other green projects in communities. So, if folks want to green up their community with more street trees or flower gardens, or food gardens, there’s more compost available locally to do that.

And then here in New York City, after the last hurricane we had, which was so devastating, by building up our urban soils and improving storm water management through community composting, we make ourselves more resilient in the face of climate change. The last hurricane, Hurricane Sandy that came through New York and so devastated us, made that all the more important.

And lastly, over time, if we can develop community composting sufficiently, according to the broad vision of what’s the most sustainable way to live, it will generate jobs. We’re not there yet, but we’re trying – I’m actually running a job training program out at the Red Hook Community Farm, and the movement has to get much bigger in order to start generating jobs.

Q: We’re very interested in creating self-sustaining models that benefit the economy and society as a whole – and this is an area that composting and recycling initiatives have a lot of potential. So apart from growing the community composting movement and the sites themselves, what are your main problems or focuses right now in creating jobs?

DB: One important development we need now – and we’re so ready for this – is the generation of revenue models. I can’t help but say that if community composting is going to be successful, we need some kind of funding stream. The ones that have been developed commercial enterprises don’t work, because the goals are a little different. But on the other hand, community composting can’t be just a none profit endeavour, because you would wind up chasing grants all the time.

And if one sign of success is that there are more composting sites, the problem you have is that the foundation pie (i.e. grants), gets smaller and smaller. So, much like with urban agriculture (at least in the US), the answer has to be to get a little more business-like and pay more attention to generating revenue, so that even when we continue to turn to foundations for grants, we also have some generation of revenue to develop financially sustainable models of operation.

Q: In relation to this, what is the market like for compost at the moment in New York – is it strong?

DB: It is. Before the hurricane we were able to meet the farm’s needs and start to explore some markets, and we found that many buyers are willing to pay a premium – to pay more than they otherwise would because they knew it was locally made compost and they wanted to support that movement. So there was this great, untapped market of people who wanted to support the local economy and keeping things as environmentally sustainable as possible.

 

 

Challenges to Overcome: NEGATIVITY and RESTRICTING Laws

 

Q: New York is a very densely populated area, which I’m sure brings its own unique challenges to community composting. What challenges have you faced in the city?

DB: One is the lack of the broadest vision of where community composting across five, ten, and then ultimately twenty-five, when we want it to be what it should be. So, as a result of that, people too superficially discount community composting with observations like “well, there’s just not enough land”, or, “Well, we can’t divert all of our organics to community composting, so we have to do municipal curbside pickup.

The other thing is existing laws. Not that there was any bad intention in the creation of these laws. In fact, in New York City, some of the most applicable laws were intended to address the problem of organised crime being involved in the hauling industry. And that’s an important mission, but the unintended side-effect was that the laws impede the growth of community composting – particularly with regard to commercial organics. The current law does not allow those organics to flow unimpeded to community based compost sites.

It’s been very discouraging because there are so many young people, in particular, who are very excited to be environmental stewards and to develop bicycle carting businesses, and things of that sort, and they’re deterred from the outset. And quite often they give up and turn to other environmental work. Hopefully we don’t lose them altogether, in terms of environmental work, but it’s sad that their passions get deterred at the outset.

Q: That is very sad. But there is a petition started now to change the laws? 

DB: There is a petition now. Some folks are trying to get food businesses in the city to ask the city legislators to change these laws. The hope is that it will gain some force. But the problem is that there’s a lot of discouragement, because it doesn’t seem like the policy makers are “there”, and without that kind of support it can be overwhelming.

Q: Hopefully it will work out eventually…

DB: Oh, I think it will. Things are gradually changing. One of the big problems we have had is folks who are able to stick with it and keep trying often look for ways to educate themselves about how to be community composters. And unfortunately, up until now, in the compost industry all the educational materials are geared towards commercial folks. The downside of this is that a lot of people who do community composting will go to these trainings, and they’ll come back thinking that the answer to their problems is machines. So  [they think] the way we can get more done is if we have a bucket loader, or we have a grinder. They start thinking the way a large commercial facility would think.

And I can tell you from personal experience that once machines show up at a site, the people disappear. That’s a big problem when folks start reaching for machines, because then the other goal – to engage the public and get them involved – starts to disappear because the machines are there to do the work and the people see themselves as less relevant, and less important.

But we’re just now starting to get some videos out, and some more information out, that is actually for community composters. Instead of coming from the compost industry, which really doesn’t think about community composters, it’s actually coming from community composters themselves. So there’s more material for other community composters to work with, so that they can keep their focus on people and on community. 

 

 

Wise Words Of Advice.

 

Q: For the final question – what advice can you give our listeners who might be starting their own community composting sites where they live?

DB: Yeah, I think I’d say a number of things. One is that it’s important to find the people who are more interested in action than talking – people who’re not afraid to do work with shovels and pitchforks. I think the danger sign would be that instead, people want to talk about doing a bunch of fliers, making a website, developing stickers, and planning out how to get to thirty different restaurants, or fifty different households.

One story I can tell you is that I had a couple of individuals who were very excited about doing this, and that’s the road they went down. They started making all these big, huge plans that were taking months and months of planning. And I said, “Well, why don’t you try doing a pickup from just one restaurant, and getting that process. Just try that for me to see if you can do that, because if you know you can’t do that, then you shouldn’t be making all these plans”. And it turned out they couldn’t do it.

So, for folks who are interested, that’s a good test. And that leads to my second piece of advice, which is to start small. Many people feel like they have to have it all planned out and go big, whereas if you just start with one or two restaurants, or maybe a dozen households – see if you can do that first, and control odours and rats. And if you can, that’s fantastic and you can build up and get bigger. But don’t spend all this time making big plans, when really you’re not able to pull off the practicalities of it all yet.

And then the last thing I would say is to be guided by a strong vision for what you want to achieve, because so many people will tell you all the different obstacles in the way. Like, “There’s not enough land”, you know, “You can’t have odours, you can’t have rats”. When, if there’s a strong vision which says community composting will be what we have to do in the future, because it’s environmentally the most sustainable and keeps the organics as close as possible in the loop…if you just remember that vision when people say all the negative things, you can say “Well, I know that might mean it takes us longer, but we know we’re going to get there”. And then they can keep up their good spirits. They’re on the right side of history!

Soil Crisis #2: Soil & The Circular Economy: Building A Movement

We talked in part one about the importance of soil health in human economies, and also about the potential for a shift to a more circular, distributed economy, and you were listing a few ways people have started to reconnect themselves with the soil with the slow food movement, community gardens and farms being opened up to the urban population and so on. But in relation to forming a different system, a different model of production and distribution, how important is education and knowledge sharing for fostering or encouraging these kinds of changes?

Robin Murray: What I would say is that the movements – both of people pressing on policy, but also the people who are actually doing it – tend to be global. So we established a Zero Waste movement here more than a decade ago, but it was part of an international Zero Waste International movement, and it was established in a number of different countries. And the internet has allowed a wide sharing of practices. And in the arguments in this country, the experiences of Canada and Australia – let alone elsewhere – have been very influential in saying “Look, this actually happens. This isn’t just a utopia, this is a different model”. And particularly as it develops, you then have new technologies coming in; light technologies, small distributed technologies, not great big centralised ones. These can be imported and then developed on your own here.

So, I think there’s a continuous process of self education, but one which is within a collective. If you look at organic farming, it is social knowledge, and people are not privatising this knowledge. They are sharing, and of course, this is what happened when we grew up; people would discuss particular problems. We had, believe it or not, an actual farmer’s discussion group, which my father used to go to, where people would come once a month from these hill farms to discuss common problems. Well now with the modern internet, you go much further and you can share. Having said that, I think there is a great need, and a role, for some formal structure of specialist education. Many countries have inherited this on the agricultural side, and in America that’s very important: those colleges have been absolutely central, and changing the approaches in those colleges, or opening up these colleges to these new systems is an important part.

There’s been nothing similar on waste. Waste is being treated as part of a technical college, but it’s done in a very old fashioned way and it needs a quite different approach. And I think now we must look to make it global, because many of the ways of looking at the thing are global, [even though] every place has it’s own specificity. But, I think this is where this new extraordinary development of Massive Online Open Courses, which are free, but you can also link into local discussion groups all taking these courses – and there are five million students on them. If one replicated that in terms of soils and in terms of nutrient management (in relation to biowaste)…knowledge is absolutely central – distributed knowledge is absolutely central, and I think probably this is going to be the key to a major change in the way in which we both think about our agriculture, and think about reconnecting it up.

I’m very glad you say that because that’s the whole idea being Compostory.org, and I agree that in the areas of waste or nutrient management,  we really need to start working together and finding connections between groups of people all around the world. And from the work that we’re doing, we’ve come across so many different stories of people and groups doing unique and very interesting work…

RM: One of the examples which I found particularly inspiring in our work has been in Japan which, starting in the nineteen-sixties but really gathered in the nineteen-seventies, was a movement led almost entirely by women. And they had become concerned after a range of food scares, particularly around milk and the quality of milk, and its impact on their children – it was children who led the concern. And so what they did is they said, “Look, we’re not going to buy our milk from the supermarkets; we will go out and we will find farmers who we can talk to about how they produce their milk, and we can ask them to produce organic milk and we will then find a way of bringing it directly to us.

Well, they started with milk and then they expanded to other food items to begin with. And they were one of the very early developers of box schemes; and because quite a few of them, I suspect, before they were married worked in these Japanese factories, which were all electronic – not perhaps in the late sixties, but certainly in the late seventies and eighties – and were very well managed; they established this box scheme whereby the producers who they picked out and who they partnered with would bring what had been ordered to the central collection point. They’d all work – as mums – they’d go in there and they would sort the boxes out, and then they would distribute them to their own houses. They organised themselves in groups of six to ten households, which were called Han. Now, I’ve been involved in some box schemes, but my word, this is brilliantly done.

And they now – in the Seikatsu co-ops – have three hundred and thirty thousand households in their schemes. Three hundred and thirty thousand. And they’ve reached right back to the farmers, so that they completely side-step the supermarkets. And they’re doing it much more cheaply, so some of the supermarkets are going out of business. And what they do is, they take one product after another, they study it and do the testing, and they then work with the farmers on standards, and they jointly discuss why some standards are more difficult than others. And then they open it out and say “does anyone have any ideas about this farmer’s problems?” etc. So they act as almost crowd intelligence on this. Their aim is explicitly to show that these higher standards are possible, and then press politically for these to be adopted nationally. And so, they’ve formed local political parties, and they have a large number of local councillors who then press for these things within their local council, to change the standards. And then they combine, and press it nationally. This has changed the food economy, in terms of farming and its quality, but it has also changed the way food is thought about and then used and cooked in the home. And I think this is a model of how soil economy and the human economy have been brought back together.

That is fascinating, so essentially these communities have bypassed the middleman and gone straight to the source, taking control of the distribution and being directly involved with the producers. And do you think this model, this co-op model should be replicated, or would be the main way to go forward in the future?

RM: Well, I think that is one way. We should all say to ourselves, “Right, what can we do about this?” You quickly find that there are other people doing something about it, and some are better at it than others. But what is amazing is that the Seikatsu started in 1972, so that’s forty-two years, and they are still enormously strong. They’ve kept the principles very much to the centre. Whenever they have problems, they discuss it openly, and in terms of cooperatives – this is a very important point – what they’ve tried to do is always to retain a sense that you’re in control of the thing, and you’re not just voting for people to do it for you. So they’ve purposefully broken up some of their bigger organisations so that people feel that it is close to them. And if you don’t do that, very quickly you get experts and they start running it, and it becomes more like the old system.

Now this model: recently in South Korea, they’ve been copying the Japanese one. And they, within fifteen years have got four major food cooperative systems linking farmers and consumers. They’ve now got over half a million people involved, almost from a standing start. Now, it’s led in – as the Japanese put it: it’s not just “how to get nice food”, it is “how to live a different life.” How not to be what I think they call “the robotic consumer”. The role of the human being is not to be a robot or to be the prey of advertising and so on; it is to take this under your own control, and think about it, and participate in it, because that is actually what creating life is about. That’s their approach, so it’s not just the co-op – the co-op is an aspect of this. It is about a whole approach to the way we live our lives, in whatever we’re doing.

Yes, that’s incredible, and I can easily imagine that such a co-op system, since there is such a link between households and farms, could work to ensure that household organic materials like food scraps and so on, be properly disposed of and brought back to the farm for composting, because the consumers then understand the need for having a clean stream of organic materials for composters.

RM: Yes.

But then as a larger social movement, and we talked about the ways governments are sometimes slow to react to this kind of thing in part one, but when it comes to transitioning our current paradigm or economy into a circular economy – do you see any other opportunities, or ways to build the movement so that it can move up to the government level and make a real impact perhaps?

RM: Well, the political issue: I was referring to it in the way new paradigms are introduced, and I think the first thing is that it’s not done just from the top – it’s usually top-down and bottom-up going on at the same time. And in our cultures, you have to have people who have some kind of connection to this, and some experience of it, which is why I mentioned gardening and getting people involved. It means that they become interested in the new way of thinking. It’s almost like speaking a language.

One of the things we found in recycling is that if you introduce a scheme of boxes for recycling, that the interest in the environment – which in one borough in London was at about twenty-three percent before the scheme started – after people started recycling, within a year it had gone up to something like sixty-eight percent. What that taught me is that then people have a reason not to screen out difficult things. If there’s nothing you can do about something…like these terrible events in Sudan, for example: if you had a brother or sister working there you would be extremely worried, but otherwise it’s somewhere far away, and there are so many of these things going on, you’ve got to live a life. Now, in the environment, if you can be actively involved in a way which fits in with life, then you become more open to this, and then you are interested in it; and if someone stands up and says “I believe x, y and z”, you think, “Yes!”. I think the same is true of soil: the more people are involved (either in gardening, or community gardens, or whatever it would be), the more open they would be.

And then You’ve got to have the social movements, who are barefoot experts: people whose lives are this – thinking about it and explaining it, being the people to animate the movement. So you’ve got that. And out of that, incidentally (if we look at it in the long-term, and we have to), some people will say “Well, why don’t I go for the local council?” And some might even say, “Why don’t I go for Parliament?” You’re growing the crop like that.

At the same time, any social movement will then link-in with universities and link in with specialists, who themselves may be worried. I don’t personally know people who spend their lives on soils, but I am sure that many of them have real worries, they’re thinking: “How am I going to influence this?” So they become part of it, and you then can reach out to ministers – particularly if we have this wider sense of representation, and if there are events or constituencies which mean that people have to listen, and this is what politicians have to do. Then the politician is open to these different expertise – because there’s always contesting expertise. So, it’s partly a question of expertise and it’s party a question of what the political punch is behind it, and you can never do it with just one or the other.

Part of the great battles we’ve had in waste is actually in public enquiries. What I would call the old interests, they fund so-called science and consultants purely negatively in order to try and destroy the new arguments. And I spend a lot of my life in University, and coming from the University we were amazed that people are so instrumental about science; that they’re actually only looking for something which will argue a particular case – lead is a very good example; it took forty years to get lead finally banned from petrol. But, you know, what was then revealed (and it happens with drug companies as well), which is people who are financed don’t have to prove anything, just disprove whatever the argument is that they’re opposing.

So there is that part of the battle, and therefore people who are informed and who are able to relate to the new movement and the new paradigm (but also with the expertise necessary for that), they are part of the important mixture.

Yes, that is definitely true because there are a lot of interests at play here and as you say, not all of them fight fairly. That is definitely a challenge and leads into my last question, which is about the challenges that might crop up. We’ve talked a lot about campaigning and policies, and with your wealth of experience, I’m sure you’re well aware of the roadblocks that can crop up along the way. Can you tell me what kind of roadblocks are in our way, and is it something we can overcome easily, or is there still a way to go?

RM: I think there are many roadblocks along the way. One of them, if you work at all levels of government, will be financial. Mainly the Treasurer comes along and says, “Oh no, we’re not going to have that because we’ve got no money.” That is a constant, and particularly when you’re early on in the new disruptive technology. How to deal with this fact? Even if you say, “Look, in the long run it’s going to be better”, and so on, he or she is interested in the actual pound signs at the end – immediate, and during this years budget. So that will always be a factor. Very often, once things are established, then suddenly it actually becomes….And the same with waste – when we started off, it was more expensive to do our systems, but once we’d adopted the Italian system (which was based on food waste collection first, and then followed by the others and you needn’t have so much residual waste collection), suddenly we were able to save money and the finance officers became your friends, not your enemies.

Then the second lot are the lawyers, because laws will have been constructed and regulated around the old way of doing things, and then they may get worried. And there is also an issue, for example, the question of how you treat organic food waste – whether it’s heated to seventy degrees, or whether we need to put it up to eighty-four degrees. What are we losing through this? Can we think through that so that we don’t lose some of the micro-organisms as a result of this? what is going to be the effect? How does that come about? Well, the regulators just say, “Well that’s what it is”. So those negative forces come it, and you have to think through them positively, you know: “That is an issue, how do we deal with that issue?”

Then you have the interests, which may be both professional interests (that’s how we’ve always done it and how we’ve always organised it as well), and then you have the commercial interests, which are also strong. The organisational interests, I find, has been one of the big ones – which is government, and in this area in particular it’s local government – because they don’t want to have complexity. Simplicity – particularly now with contracting out, they don’t want to have to deal with a hundred different small contracts, they would love a simple contract, and then they monitor it.

So, how to actually have the interface between the government at any level, and those who are doing the work, in such a way that allows for that complexity – this is one of the very interesting aspects of modern public administration. But without it, what has happened in waste is that the big waste companies have effectively side-lined the community sector. In Canada, USA, Germany, I believe, and certainly in the UK it’s dominated by I think only four major companies now. They say they’re doing recycling, but they are certainly not upcyclers. They are profit maximisers who are used to dealing with residual waste, and who want large facilities the equivalent of the nuclear power plant (though not quite as dangerous as that). But that’s what they’re used to dealing with, and that’s what their large organisations can handle, whereas we want a much more complex ecology in order to do that.

So, those are some of the roadblocks, and I never like to think of them as barriers, because any creative process always finds a block or problem. The question is how to get round it – and in this case – what kind of alliances and coalitions you can build to get in between them, or to win some of them over and get them on your side? How do we do this? That, I think, is the art of what we might call transition – the politics of transition.

The art of transition – that’s a really nice way of putting it. And yes as you say, we need to be creative and open minded in order to succeed in what we’re doing. And I’m sure we’ve only scratched the surface of this topic now, but unfortunately Robin, that’s all we have time for today. Thanks a million for coming on, it was wonderful to have you on the show.

Drought Special: Communicating Compost’s Magic in Our Cities

EM: So Robert, I know that there’s a lot of talk about California right now, which is experiencing one of the worst droughts on record at the moment. The Governor declared it a state of emergency, and has signed a 687 million dollar drought-relief package into law. Farms are suffering, and people are being urged to reduce their water usage by up to 20%. So, it’s going to be a tough summer and people are doing all they can at the moment to help save water. What are you doing over at Recology to help the effort?

RR: Well, we’re trying to help people understand and know that compost saves water, and that by participating in our curbside compost collection program, people can help California save water. Compost by weight is fifty percent humus, and humus is a natural sponge. And farmers understand this, and they’ve purchased a whole lot of compost from us in the last six months, to put it on their farms in an effort to retain more rainwater.

And, at Recology we’re trying to help people understand the ability of compost to help capture and retain water. In the city, the traditional reasons to participate in the curbside compost collection program are to keep materials out of landfills, and return nutrients to farms. And almost everybody understands the first one; everybody gets that composting is a good thing to keep material out of landfills, and to have less landfilling going on.

I would estimate that about half of the people in San Francisco are connected and understand the second motivation, which is to return nutrients to farms. And now, we’re trying the emphasis a third reason to compost all of their food scraps, all of their plant cuttings, and this third reason is to help save water, and to help California – the state that we love – do better in terms of mitigating the drought.

EM: Yeah, excellent. And I presume getting people to understand that last one is a little more difficult, then?

RR: Well, for people in the city, it’s a new idea and so, when you have a new idea, you need to get it out there a lot, you know. You need to get it on the internet, you need to write about it, you need to do TV reports about it…you need to put it in your newsletter on your website…. It just helps of people hear it multiple times from different sources.

We’ve worked a lot with some agronomists to help get the wording right, get the research correct, so that we can frame the message correctly and accurately, and then help communicate this, about how compost helps save water. And we’ve written an article, and we’re going to publish it as the lead story in our customer newsletter next week. We also shot a photograph that shows some hands holding a little young plant – green with water on its leaves, and of course the compost in the picture is very wet, and very heavy with water. So we have an iconic image that helps people…they can look at it and they immediately understand this point, that compost and the humus in compost is a natural sponge. Pictures are very powerful, and so this image is important, and we want to present this image in as many places as possible – and the message.

Mh-hm, right. And as part of your outreach campaign, too, you host an annual compost giveaway in various locations around the city for people just to come and collect compost, is that right?

RR: Yes, and it’s absolutely a joyous community event and it’s a bring your own bucket event, so people will bring two five-gallon buckets, and we’ll fill them with compost that they helped make, and they take it home and put it on their gardens, and on their outdoor plants. And, you know, this is the kind of thing that you can do when your city has a compost collection program. You know, not only can you keep materials out of landfills; not only can you send nutrients back to farms; not only can you help the region and the state that you live in save water – but you can also help create a compost that then comes back to your city, that residents can get through a compost giveaway; they can use in their own gardens; and that can come back to community gardens in your community; and can come back to urban farms in your community.

EM: Yeah, exactly. But now I’d like to get down to business and talk a little bit more about campaign strategies – can you tell us what you think makes for successful awareness campaign and public outreach strategy?

RR: Well, you have to go straight to it and say, you know, “compost to help save water”. And people kind of subliminally understand these things; it’s a very old understanding for people. All of us have gotten our fingers into the soft soil in a garden at some point in our life. And so, when we present a picture that shows compost that’s heavy with water and it’s very dark, it rekindles this subliminal memory in people.

And so, it’s our feeling that people need to see this picture and hear this message. They need to see it in print, they need to see it online…one of the points here is that the outreach and education around composting and recycling is competing with a lot of other information that’s in your community, that’s on the news.

There’s just all kinds of information out there that’s competing for people’s attention. And so, composting has to be part of that discussion. Composting has to be part of the game, so how do you make all this good information; this positive information about composting…how do you get in the game?

EM: Mh-hm, right.

RR: And one of the things is what you mentioned, is that the leaders in the community need to be talking about it, and concerned about it. And they need to attend the compost giveaway; they need to talk to the media about it; they need to hold a news conference about it periodically, or pen an article or an op-ed that gets published in the city’s newspaper. So, you need to do creative things. And one of the things we just did at Recology is we came up with a playful recycling quiz, and we posted it on our website.

EM: Yeah, I saw that actually, I thought it was very funny.

RR: Yeah, well okay, I’m glad you enjoyed it. You know, we…it’s a series of nine multiple questions – what goes in the blue bin, what goes in the green bin. And of course the first answer is something completely ridiculous, and then the second option is something frustrating or annoying. And then of course the third answer is the correct answer, and it’s something you might not have known that you could compost – like soiled paper.

EM: Yeah, and I particularly like how you actually explained in your newsletter about the soiled paper – that it’s great for compost. And that you call the short paper fibers that organisms love to consume – y you called them carbon candy. I think that’s a great way of framing it.

RR: Yeah, and those are the kinds of stories that we need to tell, and we need to particularly tell them to younger people. The Union of Concerned Scientists did an analysis – they looked at all the message about recycling and about composting: should the outreach dollars be spent on radio ads, or TV ads, or bus shelters, you know. And they measured for the first time in the history of America; really, they did a very complete measurement of what is the most effective way to communicate about recycling and composting. And the answer…what they discovered was that the best thing to do was to communicate to students and to younger people.

They reported that we all know that kids learn to recycle at school and then go home and teach their parents. What this research proved was that parents are actually listening to the kids. So when the child goes home and says, “Mom, we compost at school, dad we compost at school – why don’t we compost here in our kitchen at home?” Then the parents are listening and the family will then get a kitchen compost pail and start composting more of their food scraps and their plants at home, and increase their participation in the composting program.

EM: That’s very interesting.

RR: Yeah, it’s very interesting. So, we’re trying to tell the story of carbon candy to kids. We’re making presentations every week to students in classrooms in San Francisco. One of the reasons, you know, that we did the playful recycle-compost quiz is to do something entertaining, and we’re going to let all the schools know about it. And that’s what we’re doing in California.

The farmers are joining us. The farmers have come to San Francisco and held news conferences, and asked people to be more attentive to put all their food scraps and plant cuttings – and soiled paper – in the green bins, so that we as a community can make more compost and we can get it onto farms, and add life to the soils – return life to the soils to help protect our topsoils. This is very interesting: farmers coming into the city, holding news conferences; asking people in the city to do right by the environment, to compost more of their food scraps.

EM: Very good. And for the last question, now, I’d just like to get your thoughts on the drought and how it looks for the future of California?

RR: Well, there’s many articles that are suggesting that California will not have as much rainfall in the future as it has historically. So, we have a history of dealing with dry periods; we’re going to have to remember what has worked for us historically. And, if you want to know the answers to environmental questions; what should we do to help protect the environment, what can we do to do more recycling, more composting…often the answers are in the history.

Look back: what did your grandparents do? What did your great-great grandparents do? They composted! Okay. They had an area where they would put their food scraps – they made compost. And we need to remember that as a community, and we need to do more of that. And we’re going to need to do more of that in the future.

EM: Wise words. But unfortunately that’s all we have time for now today, Robert.

Organics Recycling in University Curriculums: A Growing Trend

EM: So Hunter, as director of the College of Agriculture, Food and Environmental Sciences at Cal Poly – can you tell us a little bit about the situation at Cal Poly regarding composting and training?

HF: Yeah, we have a large agricultural college; it’s the second largest campus in California. We have about six thousand acres here in San Luis Obispo, and an additional three thousand acres in Santa Cruz County. And so…and we have one of the country’s largest agricultural colleges, which means we have a lot of animal units; we have quite a bit of beef cattle, we have a large dairy and we have chickens and horses and so. And because of that we have a lot of manure, and we have developed a compost operation that handles all of our manure and our green waste, and so it’s a good site to do all our trainings in composting, because we have all of the equipment, and so on.

EM: That’s excellent. And your course is taking place very soon isn’t it? When is it starting?

HF: The 24th. It’s the whole week: march 24th through 28th.

EM: Right, okay. And have you been running this training very long?

HF: Well, it’s the second time that we’ve offered it. So, this is a week-long professional development compost training, and as I said, this is the second time we’ll be offering it. We did a week training two years ago in 2012, and it looks like at this point it’ll be an offering that we do every two years or so.

EM: And is your target audience the industry people that are actually working at composting operations?

HF: Yes, or agriculturalists. We have a lot of vineyards in our area, and we have…we are pretty rural, so you’re correct: the target is more people working in industry or in agriculture, or waste management, who are looking for skills either to improve their composting knowledge, or to start new facilities, so. We do have a couple student volunteers who help with it, but as it stands we do not have a composting course in the normal curriculum. So that’s something we’re hoping to develop. The one course that’s in the process of being initiated is a compost and soil-testing course, which is going to be offered through the Soil Science Department, that would focus more on the laboratory techniques for testing compost.

So, that’s exciting. We do have a pretty strong soils department, and as you can imagine, soils is a good way to connect with a lot of the processes involved in compost. And my understanding is that that’s probably about as close as you can get to actual, you know, established academic degree programs that would be focused on composting would be some of the soil science programs around the country. Because as far as I know, no one’s offering a degree in composting per-se.

EM: Right. Well, that’s great though that Cal Poly is starting to bring composting education to the fore in various ways, that’s very promising. And a question to both now: who do you are the key groups that need composting education today?

WC: I believe each sector in our culture and our economy does have a need for some form of composting education. But at this time, the particularly important target audiences for composting education in my mind, would be ag professionals and growers, the agricultural community; some of the more traditional farmers have maintained a form of composting, many of them certainly still do land application of manure and animal bedding, and things like that, but not a lot of them do actual blending and composting and use the compost. With the upsurge of interest in local foods, organic growing, specialty foods and so forth – they’re a prime target audience. As well as, I think, local government officials, because that’s where the policy rubber meets the road. And local government officials can do an awful lot, just with their own contracts for services, their own direct services that they provide.

The third prime group I think would be current waste management professionals. Absolutely, I think those are our target audiences right now. But really, the answer could be everyone; anyone.

HF: Yeah, I would agree with that. I think that was well put. I think on the state level too, in terms of policy makers, there should be more education. Particularly when it comes to aligning some of the overall goals of these different agencies. In California we definitely struggle from the fact that there are a number of environmental regulatory agencies sometimes that don’t…it almost seems as if the policies are not well aligned. So, you know, here the big challenge is the fact that the air quality boards are creating restrictions in terms of monitoring VOC’s, and so forth, that are making permitting of composting facilities difficult in some areas, so at the policy level I think there’s some need for education as well.

EM: Excellent points. And like with Cal Poly, we see more and more universities including organics recycling and composting as part of their curriculums and daily activities as well. Can I ask you both, then, for your clear take on widely including organics recycling in university curriculums especially, possibly even as a stand-alone course. Is it a good idea?

HF: Yeah, I think it would be. I think it would tie into student interests, especially, you know, there is a fairly strong contingent of students who are interested in environmental studies and in recycling, and so on, and…. The other thing that I was thinking about is the fact that a lot of academia across the country, and probably across the world, is paying a lot of lip service to this idea of interdisciplinary studies, and breaking down silos, and, you know, having offerings across departments – and composting is really ideal for that type of education because it draws on a lot of the different disciplines; so everything from soils, to environment, to biology, agronomy, engineering, even marketing, or energy use. It can all be tied into these types of curriculums. So, I think it offers a lot of potential for meeting that student demand and for, you know, engaging the different disciplines. And it also could be a response to a lot of overall social goals too, which is namely to get organics out of the waste stream.

EM: Wynne, do you want to weigh-in on that?

WC: I definitely think that there is a need, and it would be welcomed for colleges and universities to begin to create and teach, and keep on-going formal curriculum built around composting. At this point, I would agree there’s not a lot of formal curriculum and/or even stand-alone certificates or degree programs out there. The non-formal education community has actually done a better job of pulling together the players. And it was already noted that extension is one of key players – certainly here in Illinois, UOI has a strong extension presence and they have a good composting instructional setup and resources online. And there are places like Cornell’s Waste Management Institute that has done a lot of research; I believe that that institute is set up more for research and hands-on involvement for the students in research.

EM: They have a composting site as well, and the campus also has a lot of sustainability and recycling initiatives going on too around the campus. So, you know, that’s really great – they’re at the forefront of sustainability education as well at the moment.

WC: Oh yes, uh-huh.

HF: Yeah.

WC: University of Georgia also has some research going on in vermicomposting at one point, as does SIU Carbondale here in Southern Illinois – they have a major vermicomposting program; they utilise…they grind all of the food scraps from the cafeterias on campus, feed it to worms in an – at least – thousand square foot building, and then take the vermicastings and utilise that on campus. So, it’s a hands-on opportunity for the student workers to be involved, and to learn about it. It’s also that some of the professors there are conducting research and involving students –

EM: Yeah, and another example off the top of my head as well would be the University of Wisconsin-Oshkosh, which does a lot of work with renewable energy – they’ve installed a biogas facility at the university, that’s totally run by the students and provides great training for anaerobic digestion and biogas production – so there’s that as well.

But as you say, there doesn’t seem to be a formal, stand-alone university course or curriculum based around compost – how far away do you think we are from Universities offering these kinds of courses?

WC: There is a change on the horizon, and groups like Compostory.org are helping to usher in that change. I do believe universities and colleges are waking up to the value of multi-disciplinary approaches. The students want it. Hands-on experience is so valuable, along with the research aspect and the higher-order thinking and writing skills. The hands-on stuff and service goes right along with it. And industry, I think, is arriving at the same point as education is, where we see a need for some change, and more collaboration.

EM: And you’re developing a curriculum for Kankakee Community College as well. I was wondering what role do community colleges play in composting education today in the US?

WC: Community colleges have served more-or-less as the “in-between” the universities and industry and trade associations that are providing very specific, very targeted short-term training, you know, for a specific topic. Community colleges can help take that and put that within a context of industry, but also giving academic credit, which then can be build upon for these further certifications, degrees, and so forth. I think that all three levels need to begin to work more closely together, and it is beginning to happen.

The National Recycling Coalition, along with RONA (the former recycling organisation of north America) – in which there are many movers and shakers out there in California, Hunter – put together three years ago a national committee for sustainable resource management learning standards; and from a variety of sectors: business people, processors, academic folks, non-profits…this committee agreed and put together twenty-five standards for learning, which any state recycling organisation, trade association, or college, really, could or should be using if they want to formalise and teach some standardised sustainable resource management – it’s not just recycling coordination anymore.

And they’re brand new, I mean literally hot off the presses. They just were announced and, kind of, finalised late in 2012. There are several state recycling organisations that are considering implementing them, or being more-or-less, quote-on-quote certified to teach sustainable resource management. And again, I’m Vice President of IRA here in Illinois, I am chair of the Certification Committee here; we have a hope and desire of taking these two classes: one is currently being taught through Kankakee Community College online, completely online. The second course will be available this summer. And then the students in that course will be offered the opportunity to test for certification to become a nationally certified sustainable resource manager through IRA – through the Illinois Recycling Association – because we’re using these new learning standards.

Now, I’m kind of putting the cart before the horse because we haven’t formally been accepted yet, but I’m pretty sure we will be. We’re excited about it, we’d like to see it grow and again, in my mind, this collaboration – academically, but also with industry driven, up-to-date, cutting-edge information on best management practices, on current best technology…. That stuff comes from industry, you know? And where industry can collaborate and advise, and – whatever – help provide and create this kind of curriculum, there you will have very valuable curriculum.

EM: Yeah. That’s really great points there, actually. And what would be the outcomes, then, of having such widespread composting education do you think?

WC: The ultimate outcomes? I guess the ideal would be that composting begins to be accepted as an integral part of a sustainability curriculum, as well as any sustainability goals at any local government or community program, any organisation program. That there would be a greater number of jobs specific to composting in the economy as a result of professionalising it academically and, you know, through the trade associations.

And just that…you know, there’s going to be more of a cultural buzz as time goes on. There’s definitely a paradigm shift, a sea change occurring. There is a greater push for sustainable practices that capture and manage natural processes, as part of every day business and as part of our learning and education. So, I just see…including composting education and training at any level – formal or non-formal – that’s the way we’re moving.

EM: Yeah, definitely. And last question now – Wynne, you’re involved in course development – what needs to be done, and what types of support is needed in order to develop such a curriculum?

WC: Well, federal dollars, grant dollars, private foundation dollars; to help a college or a professional trade association…you know, it takes time. I mean, a college course – a university course – the general rule of thumb is that it takes twenty-five weeks full-time to develop a new course from scratch. Two courses – you’re talking a full year just to develop two new courses, and that would include researching all the existing stuff that’s out there right now. That’s a chunk of someone’s time. So that’s valuable, you know? And the knowledge of how to pool all those resources together, and…. So anyway, what’s needed is support for the college or the trade association to be able to do that.

HF: Yeah, and that’s actually how we got our compost training that we’re doing here next week. Originally the first year’s offering was funded by a grant from the USDA SARE program – which is the US Sustainable Agriculture Research and Education – they funded the first training in 2012. And then, this current training, we have also received some funding from a local charitable foundation, the Miossi Foundation, so…

WC: Yeah. So there are often grants available through federal agencies, through colleges, to help with something like that. Honestly, unless trade associations have a 501 C3 designation, I doubt that they would, many of them would be eligible for a lot of the larger foundation grants. But small grants, even, can help. So, getting a little bit of funding together to begin with is a key start.

But beyond: assuming you have somebody that’s going to drive the bus and dedicate a significant amount of time to it, then begin researching. You would have to begin researching the curriculum that’s already out there, the industry and trade association-type trainings that’s already out there. I already researched – I don’t believe there are learning standards out there, but that would be a great thing to begin to pull together. You know: what would be the learning outcomes of such a training. I.D. the proponents in your area: those that are interested for environmental reasons, as well as those who are interested because it could be a value-added operation for their existing business. Fill in the blanks; bring them to the table and fill in the blanks. Decide what training is already available, where we need to go, and then fill in the blanks in-between; what the students should know, and how to get it to them.

And I’m a firm believer, as Hunter is, that a blend of formal resources and some classroom learning, with the science behind it…. Compost is perfectly suited for STEM: for science, technology, engineering and math – all of those skills can easily be applied when studying and/or implementing composting. So: bring everybody to the table, come up with a good product, with very specifically identified learning outcomes…someone is going to pick it up somewhere along the line. That would be my advice.

Food Recovery & Onsite Composting in Schools & Institutions

Kelly ErnstFriedman:

EM: Let’s just start I suppose with a little background information – you started the Food for Kids program back in May 2013, yeah?

KE: We did, we did. We were approached by Nancy Deming, who works for – she’s a consultant for the Oakland Unified School District, and she works for a program called Green Gloves, which is all about greening the Oakland school system. And she had been seeing a lot of the waste that’s been going on – she works on various initiatives in the schools, including a sorting program, which is the basis for our food donation program. Instead of everything going to the landfill, she’s working on getting the schools to sort their trash at lunch. And then they have something called a Food Share, which is basically, the kids – especially at the elementary and middle-school age, where their bellies are a little smaller and they’re required to take a certain amount of food and they often don’t eat it. So the Food Share bin gives them a chance to put that in there and if someone else decides “hey, I want another milk” then they can take that during the cafeteria period. But then after that cafeteria period, that food goes into the landfill, or the compost.

And so Nancy really wanted to connect with someone who could take that food and then donate it. Thanks to the Bill Emerson Food Recovery Act, which was passed in the U.S. In 1996, organisations are encouraged to donate food. It’s sort of a liability coverage that says that unless there’s gross negligence, non-profits can take this food, or businesses can donate this food and get it out to people that are hungry. So, we kind of had the legislation there behind us, we just needed to figure out a system that worked for Oakland. And we started our pilot in May 2013 with two schools – two elementary schools – and we recovered over three thousand pounds of food, and worked with about thirty families just in about six weeks.

EM: That’s great. And how much would you recover now per month, say?

KE: We…total, we’ve gotten about, I think forty-five hundred pounds of food in the last six months. And we average probably thirty to fifty pounds a week. One of the schools that we’re going to be starting in the next couple of weeks – we did a survey and they had fifty-five pounds of food from one day of lunch.

EM: That’s a lot of food.

KE: It is. It is (laughs).

EM: And does it all get distributed then?

KE: Yeah, all of the poundage that we note – all of that gets distributed.

EM: That’s very good. And to touch on the regulations again, is it primarily the regulations that are preventing schools and other public places from distributing food?

KE: It is, it is. Because the food comes from the Government, there’s very strict rules on what can and can’t go back to the kitchen, and that’s been another part of the program as well, sort of educating the kitchen managers and staff about what can be returned. So for example, if they have apples or pears that go out and go into the Food Share; if those are in pretty good shape, and the kitchen manager has the opportunity to make the call and say “you know what, I think I can use these again tomorrow, or the next day, they’re going to hold up”, they can take those back into the kitchen, clean them off and re-serve them. Anything that hasn’t had a, kind of, heat differential, that can go back in and be re-used.

But anything that has had some kind of temperature change – we see a lot of cartons of milk, for example – some of our schools are satellite cooking kitchens, which means packaged food comes in that gets heated up, so they’ll have a plastic wrapped piece of pizza, or a burrito, or a baked potato with cheese and broccoli – anything like that would have to go into the trash before we came along. But now that we’re here, then immediately after the period, that goes back into refrigeration or the freezer, depending on the site – and then that is distributed either to the students and their families during a distribution period at the school, or it’s connected with a community partner: a soup kitchen, a church – some organisation doing food assistance – and is given back to the community.

EM: Right, okay. And do the schools that you work with compost their waste already, or is that something that hasn’t been done yet?

KE: Yes. That’s actually a great first step to setting up a type of food recovery program, because you want to make sure you’re getting the food – you don’t want to have to actually, you know, go through the bin and do a dumpster dive type exercise where you’re cleaning things off. So having a sorting system that includes compost and includes a food share is absolutely essential. And that’s the first step in how we choose the schools that we’re expanding to is do they already have a Green Gloves in place, or can we get a sorting system up and moving relatively quickly so we can begin the food recovery.

Because that’s just…that takes a little bit of onus off the process when that’s already done, and you can say “okay, here’s the box of food that gets donated – great, that’s done, that’s neatly packaged – let’s hand that off to the parents,” or “let’s hand that off to the community organisation”. So definitely, I think composting and sorting is vital.

EM: Excellent, so they work well together side-by-side?

KE: Yeah.

EM: And would you say that composting and the food recovery program are a good educational tool for students as well?

KE: We hope so. That’s actually, sort of, the next phase that we would like to work on is getting the education component in there, because we have hand outs and, you know, we talk to the parents and the kids. And that’s one of the feedback from one of our pilot schools, Brookfield, saying “this is really important, this is the message that we want to be sending our kids, is that food…you know, food is a resource, food isn’t something you take a bite of and you throw away and you really have to think about that”.

Thankfully, you know, because of Nancy’s work with the Green Gloves program and the sorting, the kids are already getting a sense of that. One thing that’s really fun to see when we do site visits is; we go in at lunch and you see these kids, especially the youngsters that come over, and they’re really looking at the bins and saying “okay, is this landfill? Is this compost? Is this food share?” And you just, kind of, see them working it out, and then they put something in the food share bin and we say thank you, and they just get this big smile on their faces. So, you know, it’s definitely a group effort and all of these different things working together – the teachers as well have been very supportive of the program, and you know, they want to see the kids getting more nutrition and understanding about food and the food system, so

EM: Yeah, well that’s never a bad thing. And I know you’ve been running this in schools, but could you see this type of program running well in a university, say, or other types of spaces, like maybe restaurants, for example?

KE: I think that, not necessarily this program, but there is potential for other programs to work. In the United States, we have a lot of really exciting initiatives going on: there’s the Food Recovery Network, and Food Recovery Network is all about creating student-run food recovery networks in universities. And they have, I want to say over twenty or thirty schools that are participating, and then they had another sixty requests from students that want to start a program. There’s also really great restaurant initiatives that are going on. Out of Austin Texas there is Go Halfsies, which is a group that’s working with restaurants to help them offer smaller portion sizes. So they would have a meal, it would be half the size and the difference in price would be donated towards a hunger relief organisation. You know, there’s all different kinds of ways that businesses can get involved, really specific to what their business is. Restaurants have a great opportunity to donate food and to create compost programs. Schools, especially, you know, large universities with multiple cafeterias – there’s a huge opportunity there to divert waste, and also to get students involved in the process, which I think is really important as well.

EM: Yes, definitely. And for those listening in who might be interested in setting up a similar initiative – could you maybe give a bit of general advice or share some insights into how best to go about setting up a program like this?

KE: I think the biggest thing, you know, regardless of what country or what school district you’re in, is really working with the school and working with the parents and the staff. Because with any new program, to make it work you have to make sure it works with what’s already going on. Particularly with a resource-strapped staff, you don’t want to come in and say “here, we’re going to give you a whole bunch of new tasks”, you know. So, talking with them about the problem of food waste, and then figuring out a way that’s going to work best for them. Some schools are going to need to do distribution twice a week, some are going to need to do daily. You know, looking at the amount of surplus you have is a great way to start: doing some kind of survey with the kitchen management – just to look at okay, “how much milk are we getting in? How much extra food do we have?” And really working with each site and making it very site-specific. There’s not, sort of, a once-size-fits-all. There’s definitely steps you want to take in terms of talking with the schools and finding parent volunteers, or if you don’t have a strong parent volunteer group, which several of our schools don’t, you can partner with another community organisation. We have several schools that are going to start – they’re going to be working with community partners (churches and soup kitchens) that are going to come and pick up that food every day. So, it’s a much smaller ask for the community, but we’re still recovering that food, we’re still getting that food to people that are in need.

EM: Yeah, which is the most important thing. And what’s the future vision for food shift then?

KE: The large vision for Food Shift is that we can create a fee-for-service food recovery network. We believe that food recovery should be compensated in the same way that waste management is. In the same way that we pay for people to pick up our trash, our recycling, food recovery should be valued in the same way. It’s difficult with school districts because they’re so resource-strapped, but what we see, sort of the larger vision, would be policy changes around food recovery. So, you know, cities and municipalities, and maybe even the federal government would eventually put money behind this and say “yes, this is important, we’re going to pay for this service”. So not necessarily the schools themselves, and it’s not going to be, you know, it’s not a get rich quick kind of thing, but ideally yes, that that would be compensated. But that’s a much further down the line vision.

 

EM: That was Kelly Ernstfriedman, program director of the Food for Kids program, with some great insights and advice on running a food recovery program in a school setting. We go into detail about potential models for edible food recovery in lesson 3 of our online course, and list the key steps on how to get started.

And while our next guest doesn’t work directly with a food recovery program, he does have great experience with onsite composting in a University campus. Professor George Pilidis is a member of the Biological Applications and Technology department of the Ionannina University in Greece. Ioannina University is the first to start composting its waste in Greece and Prof Pilidis has been monitoring the composting program’s performance very carefully, so we’ll get into a little bit of detail on how it all works, and any issues they had along the way.

 

Prof. Georgios Pilidis:

EM: So Georgios, Ioannina is the fourth biggest university in Greece, I’ve heard you started recycling back in 2008, but when did you start composting organics?

GP: So I have to say, we have started earlier. Fifteen years ago, we had started to recycle our laboratory waste. This was the first step, and a very important one, because we were the first university [to do it] in Greece. We have started for the management of the solid waste in 2009, and the composting system was part of the solid waste management within the university campus; where we have approximately twelve thousand students – undergraduate students – plus two thousand post graduate students, so in total, fifteen-thousand people are living in this area.

EM: Okay, you must have quite a few restaurants and canteens then?

GP: We have two restaurants and we have fourteen canteens.

EM: So yeah, that’s quite a lot.

GP: Yes. (laughs).

EM: I imagine that’s lot of food waste too, then?

GP: Yes, we have approximately one hundred kilograms food waste per day.

EM: Right and how much compost does that make in the end?

GP:  So, according to our studies, fifty percent of the carbon is released in form of carbon dioxide, while the other fifty percent is being converted into a first-class compost. This means we have approximately fifty kilograms of compost per day.

EM: Okay, and how do you manage the compost then, do you sell it?

GP: So, this compost is used mainly by the gardeners of the university, and for this reason we do not have any chemical fertilisers within the campus. As well as, it’s used by people which are working in the university.

EM: Well, that’s a great use of compost.

GP: Yes.

EM: And you were the first university in Greece to start composting?

GP: Mh-hm, exactly.

EM: Yeah, how did the students react, did you have a lot of education to do beforehand?

GP: Yes, the students reacted very positively. We have located this composter directly under the student restaurant, in the basement – it’s an open-air basement of course – and we have also bought an air filter, therefore we do not have any bad smell. The only smell which is coming out is during the maturation process, which is taking place outside of the composter. And we use this composting unit also for didactical issues: many schools are coming here and visiting this composting unit, children, and….this educational process is excellent.

EM: That’s great. Yeah, the educational opportunity, I guess, is a good reason to have a composting unit in a school and university…

GP: Yes.

EM: And can you tell us a little bit about the composter itself?

GP: The composter is a big one – a closed system – the dimensions are approximately five meters long, and two meters in the height, and capacity is four cubic meters, the cylindrical capacity, and this composter is able to treat between four hundred kilograms and one thousand, two hundred kilograms food waste per week. We have approximately six hundred to seven hundred, so we manage this very well.

EM: That’s great. And it’s important to pick the right equipment for your specific needs – what was important in your decision, then, when it came to choosing a unit?

GP: The first and important thing is the material where this composting unit is made. The stainless steel, for example, the quality of the stainless steel is very, very important. And also, of course, the mechanical part, because our composter unit has temperature sensors automatically we have also aeration, and rotation of the drum [it all works] automatically, and this electronics should work very well. But the most important for me is the frame of the composting unit, and the material which is used.

EM: Right, and how do you handle contamination in the input stream of your composting unit?

GP: We are very happy because only one person is responsible for that from the university restaurant. And this person collects the waste, and we made recommendations to him, what kind of food waste he should [put] in the composting unit, and he’s very careful of course. The input is very important: you should avoid to have foreign subjects, for example glass or plastics or stones, or something like that.

EM: Yeah, it sounds like it’s a well controlled system – and this composting program was a pilot program to see if it could work elsewhere, is that correct?

GP: Mh-hm. The pilot program works very well, and Greece as [a] country is really far away from a good system for solid waste management. It’s the biggest environmental problem in Greece at the moment, and we thought that the university should play a pioneering work on that, and we made this, I think, [unclear] with success, due to the fact that we are going in many symposiums and national conferences, and we are presenting this…I think we’re well-known, at least in Greece at the moment.

And at the moment, as far as I know, the municipality of Ioannina is going to buy also such types of composters in order to place them in different places of the city: Ioannina is the seventh-biggest city in Greece with approximately one-hundred and twenty thousand inhabitants. And they’re going to place five or six such composters in places close to restaurants. I do not know exactly the plan, but they’re going to buy five or six composters like this.

EM: That’s great to see it expanding. And permits and regulations apply in most countries and can be quite strict – what’s the situation in Greece and did you have any issues?

GP: No, the Greek government has not any regulations on the quality of compost or the operation of composting units, but there is the European Compost Net, and they set some quality criteria. But according to my opinion, this criteria should be expanded also to organic compounds, not only to heavy metals and xenobiotics or foreign subjects etcetera, or microorganisms, they should also focus on organic compounds and this has been not done. And in order to be a member of this Compost Net, you have to produce a compost which has the regulation which was set up by this Compost Net. But these regulations, according to my opinion [are] very high – for example if you say, for lead for example, it’s approximately one hundred milligrams per kilogram and this is too much.

EM: That’s too much?

GP: Yes, it’s too much for me, or for nickel, it’s twenty-five milligrams per kilogram, this is also too much. They should be more stronger.

EM: Okay interesting, and compost quality standards is an important and quite serious subject that unfortunately we don’t have time to get into right now since we’re running out of time, but George just to finish up – do you have any final words on the success of the composting program or?

GP: No no, we’re very happy to have this composting unit here. We’re very happy that we’re the first university which is using this solid waste management system within the campus. And, of course, many people are coming and visiting us, and I’m going everywhere and giving lectures on that, and I’m very happy.

EM: Well that’s great, that’s great news. Thanks for talking to us today, Georgios.

Composting in the Biotech Industry: Case Study

EM: So Frank, could you tell

FF: Yeah, I actually got into this business, didn’t know anything about composting, and had answered an ad in a paper to manage a composting facility in North Carolina. At the time I knew nothing about what composting was all about, other than the normal, basic biology and science behind it. And I got involved with the US Composting Council, which was a good resource for me: I met a lot of people, visited some sites, and really learned how to do it on a commercial scale.

And I started this facility, then got out of that facility – worked there for about four or five years – and started another facility, which is working with Novozymes. At the time, they were looking for alternatives for their residuals coming out of that plant. It was an alternative for them. Traditionally I lot of the biotech industries do a lot of land application of their residuals and put it on to farm land – which is, you know, the cheapest way to do it. However, what has happened is a lot of the area is starting to get more urban, so we’re losing that farmland; so this was another way of actually looking at more of a sustainable approach for the residuals long-term.

EM: And how much residuals do you take from Novozymes itself?

FF: we take about thirty-five to fourty percent of the residuals coming out of the process – the plant in Franklington which is just North of Raleigh, North Carolina.

EM: Right, and how much do you produce then?

FF: We produce about thirty-five thousand cubic yards a year of finished product.

EM: Right, and how much is that in tonnes?

FF: It’s roughly about half, because it weighs about a thousand pounds per cubic yard – a thousand pounds a cubic yard is kind of the number that we always use.

EM: Cool and tell me a little bit about the facility itself: the location, the size…that kind of thing.

FF: Yeah, the facility itself sits on an eight-acre site. We have about five hundred acres and we’re smack in the middle of that parcel so we’re surrounded by wooded area. It’s very much a rural area, so we don’t have issues with, you know, neighbourhoods encroaching on us because we own the land all round it (laughs).

EM: Sounds ideal for what you’re doing then.

FF: Yeah.

EM: Could you talk us through, then, the general process of composting at your site and the equipment that you use?

FF: We have, you know, we start off with the front-end loaders. They’re our measuring cups (laughs), okay. And then we have a big mixer just like you mix when you’re baking a cake. It is a Kuhn Knight – it holds about thirty-five cubic yards. It’s a commercial, industrial mixer so this is a rotating reel and it’s got augers in it that are against it, so… And then there’s a conveyor belt that comes off that mixer. We have a truck that parks underneath they conveyor belt, and the conveyor belt conveys the mixed material into the back of the dump truck and then he takes it out to form the windrow.

And then the windrow, you know, they’re about twelve feet wide and about six feet high. The turner – it’s a Backhus, a German turner – and we turn based on meeting our pathogen reduction: basically one time a week, or once every five days. And then taking temperature measurements every seventy-five feet, and we do that with a manual probe. And we use a compost manager system that’s developed from Green Mountain Technologies so we can datalog that back into our PC, so we can track the temperatures.

So after sixty/sixty-five days we’ll pull that windrow up and we’ll feed it to a screener. We have a Backers star screen, it’s a rubber star screen, so all the fine material falls in between the stars, and all the large runs up. The oversize, as we call it, we take that and it goes back into the front-end of the process. And then the fines, we can screen to whatever particle size we want based on our sales demands and what our inventory is. And then we’ll stockpile that material and we’ll let it cure for another sixty days. So most of our materials are at least one hundred and twenty days old before we sell it, depending on the season: our Spring – we have a big Spring sale season which starts in March and May and then it dies down in the middle of the summer months as it gets really hot here – then it picks up again in the Fall. So we have, like, pretty much a six-month sale season, that’s pretty robust.

EM: That’s great.

FF: Yeah.

EM: So, is most of the materials you take from Novozymes or is there any other places you take them from?

FF: There’s a wood-moulding manufacturer that we take the sawdust from. And then there’s five different municipalities in the area and they bring us yard waste. And so, we have to grind that, some of it comes in pre-ground and some of it we have to grind, so we have a horizontal Rotochopper grinder and we’ll grind that down into three inch minus material. And we sell everything bulk, we don’t bag anything. So everything goes out in large tractor-trailer loads.

EM: Cool, and to give us an idea of how it sells – what are the markets that you sell to, are there many?

FF: So, you know, the traditional markets that we sell into are the landscape construction, or landscape installation, markets. We also sell it to the nursery market, and we do sell it to some golf – the golf industry. And then the new area that we’re in is…it’s called Green Infrastructure, I don’t know if you’ve…it’s also called Low Impact Development, and there’s some new rules and regulations that, you know, if you build a building now you have to estimate how much storm water flow you’re going to have – and you have to catch that one-inch rain event. So we’re starting to sell compost into those markets, because compost is very…it has a high absorption rate, it’ll hold a lot of water, it’s basically a natural fertiliser and it’s a great growing media. So there are several areas where compost is being used – green roofs is one of them. You’ve heard of rain gardens or bioretention basins, green swells…. And these are all different applications within that Green Infrastructure category. So that’s happening here in the US.

And then, more and more we’re seeing compost being incorporated into the soil, so there’s a better percolation, a better infiltration rate into the soil – and that’s a whole new market, we’re just kind of scratching the surface. And then another market is erosion control: which is preventing the sediment from running off on construction sites, and that has been a huge market for us just in the recent years.

We’re just starting to sell a little more into agriculture; agriculture believe it or not is not a big market for us, but more and more people are seeing the value of using compost. And then there’s a big push here in the US to grow local, buy local. So we’re seeing more smaller farms, and people are now more interested in keeping their farms, but growing organic and being able to provide that to a farmer’s market rather than a grocery store.

EM: That’s amazing yeah, that’s very promising. And you have a number of different products for different uses – I presume it’s high-quality compost you’re selling?

FF: Yeah, we…you know, because our feedstock’s are very consistent, we get a very consistent product on the back-end. We don’t change our process – so that’s been a big part of us is keeping that quality control on the process side and then also on the finished product side.

And then we screen the different sizes. We screen really, really fine mesh – quarter-inch material – you know, very fine, and that goes to the golf course market, that goes to that green roof market. And then we screen a half-inch/three-eights inch product, which is pretty general purpose: it can be used in potting media, it could be used as a mix, it could be used directly into the garden as an additive. And then we screen really at a larger size, which is coarser, it has a lot more of the woody material in it, it’s got more mulch content in it – and that’s used for erosion control because that’ll hold the slopes, just like a mulch will hold and give you temporary stabilisation of that slope.

And then we do some mixes: a lot of people, they don’t realise the value of the word compost so they’re used to buying topsoil – and we don’t sell topsoil because that’s not sustainable. But we manufacture topsoil; so we take a portion of compost and we blend it in with some sand and some silt and some clays and we make what I call and engineered topsoil, and that’s a very popular product because when people say: “well, do you have topsoil?”, and I say: “no, we don’t have topsoil, but we have engineered topsoil”. And then they go “well, what’s engineered topsoil?” and it’s basically a topsoil that we create by blending other ingredients in with it.

And that’s been a huge market boom for us, because again people are more used to buying topsoil. But when they buy topsoil they buy weed seeds, they buy…I mean, who knows what’s been sprayed on the field…so it’s an unknown but, see, they think if it’s black it’s good, because if it’s dark then it’s rich. But when you look at the analysis of topsoil here in North Carolina, there’s really only one percent organic matter in the soil. And our compost has about sixty to seventy percent organic, so it’s very high in organic matter, which is really the secret to compost, is that: all in the organic matter, and the humus.

EM: Right, and why do you think that there’s so little understanding about compost then, in a general sense?

FF: So I think, you know, it’s all how it’s marketed. And a lot of compost is sold in the US not as compost, but as a soil supplement or as a topsoil, or you know, a manufactured topsoil – and that’s just the stigma that people just have to get over, over time, I think. One of the challenges that we have in the industry is to monetise the value of compost because if you took each and every one of those components and you started adding, not just the value of fertiliser value, but the cation-exchange capacity, organic matter, biological activity…but people don’t value that, they just look at NPK (nitrogen, phosphorous, potassium), they don’t look at the overall picture of soil health.

I think part of the problem is, you know, the commercialisation of fertilisers – the brand-naming of fertilisers – you know, “hey it’s Springtime, time to go out and get your spreader and….” well, you know, we don’t have that market appeal. We’re trying to work on people getting back to basics. One thing that the recession has done is that it has increased awareness of waste, so people aren’t wasting as much. The other thing is, people are now growing a lot of gardens themselves. So that’s been a big push for us: community gardens are growing all over the US, there’s a big push for urban gardens. You know, so I think it’s an awareness thing and I think we need to do a better job at educating the general public as well as school kids because if they learn it, eventually it’ll become common practice.

EM: Yeah, so get it into the school curriculum.

FF: That’s right.

EM: And do you know of any other businesses or companies that are composting their organic waste?

FF: I don’t know of any right off my hands that I could think of, but you know, that changes all the time. I know there’s some egg processors that are doing it here in North Carolina, there’s some tobacco companies that are looking into doing it with their stems – so there’s other industries, I don’t know if it’s just biotech per se. And a lot of it, I tell you, I’ll be honest with you: a lot of it, and it was a big bridge that I had to cross, was the big liability issue here. You know, “oh, what’s the liability, you know” and I think a lot of the corporate people say “well, that’s not our business, we’ll, you know we’ll just send it to a facility”.

So a lot of facilities are probably taking similar material like we’re generating and composting that material. There’s a plant not far from us that makes amino acids, and I know that they have a left over residual, and they’re taking that and they’re shipping it to a competitor of mine, and they’re composting it. So, directly setting up a facility on-site, I don’t think there’s a lot. But I think there’s a lot going to compost, but you just don’t know about it because they’re private contracts they’ve arranged.

EM: Yeah, well it’s good so long as they’re composting it!

FF: That’s right! Yeah, that’s right.

EM: So what do you think it takes to get started on a facility like your one?

FF: You know, it’s very much baby-steps. And I think the approach was: prove it on a small scale; figure out what your technology is. The obstacles that I look at are: of course, money is one (laughs). But you know, location is really important. We don’t really have an odor problem, but you know, when you’re handling stuff like food waste and some of the other materials…if you’re handling manures and there’s dairy farms all around you – there’s not an odor problem (laughs). But if you’re handling dairy manure or food waste and you’re surrounded by a housing development, then there’s an odor problem, right? So I think locations are important.

You want to be near a major road, but you don’t want to be right on the, you know, you want to be off the major road. You want to be in an area that’s pretty much you know what the growth around you is going to occur. Like, I know there’s facilities that have been around since the 1970’s and what is happened is that everyone sold the land around it, so now it’s all housing – well, now you have all these odor complaints. Well, it was there since the 1970’s, I mean….

Yeah, so location’s important and, you know, storage issues, seasonality – those are the big issues. And then, you know, how you plan your facility. You know, looking at the process flow and how materials come in, and you want to make it as linear as possible. Just like, you know, an auto-manufacturing line – the line’s straight. So you want to have an engineer to be able to figure that out, but you also want somebody that has knowledge in the industry.

It’s a lot of materials movement, so if you want to move something a short distance, you could move it with a loader. If you want to move it a little bit longer than that short distance, say…sixty/seventy feet, maybe it’s better to use conveyors or a truck, like a dump truck, or a conveyor and a truck.

And then, you know, your run-off: you want to make sure that if it’s an outdoor facility, that you’re capturing that run-off.  So contamination is also an issue. So those are the big things. And then, sizing your equipment for your facility, so like, you know it’s really better to start out with leasing equipment because the life expectancy of that equipment may be short: like a grinder that takes a lot of beating. So all those little things on figuring out what the movements are and how to increase your efficiency in those movements are really important.

EM: Amazing, great advice. And would you say that it’s economically viable for businesses to go down this road?

FF: Yeah, I think it is. You know, the model in the US is: a lot of composters make the majority of their money on the front-end which is tipping fees, not so much on the back-end. It may be eighty-twenty or sixty-forty. And I think that it could be a good business, but it all depends on what those…you’re competing against the landfill, so your fees have to be better than the landfill so you can bring that business in.

You want to try to get as clean feedstocks as possible, so contamination is an issue there because if you’re picking out a lot of trash and stuff, that’s just more processing time and more equipment. If you make a really good product on the back-end then you can recoup more of your profits on the back-end. So, you know, I think it can be. I know the other model is the AD model, and that works really well where you have high-density populations, small footprint, high tipping fees – so you can recoup some of that in the tipping fee, the energy generation, and then the final product.

What I worry about is there’s a lot of AD plants out there that…they consider everything but the final product, and you know, they’re saying “well we can sell it as a digestate”: in a lot of cases here in the US you can’t because you have to treat it for pathogens, you got odor issues, it’s not a mature product. So it’s more of a cost than it is a profit. So, I’d like to see that model work, where they take the digestate on the back-end and they compost the digestate too so they make another value added profit.

EM: Yeah, absolutely, that makes sense. And finally, is there any last words of advice that you’d like to give?

FF: I’m a believer that if the markets are there and the markets are steady and there’s a really good demand for the product, that we’ll see more facilities expand, we’ll see more facilities being permitted, because the economics working out – start working out a lot better, because you know. A lot of the composting that was done early in the US was mandatory state mandates on keeping yard waste out of the landfill, which was a smart thing to do because it’s useless in a landfill. But they didn’t have the infrastructure, they didn’t have the training and the technology to do it right, to make a product. And you see a lot of municipalities kind of getting out of the composting business, and you see a lot more private-public partnerships being developed. Because I think we understand it more as a manufacturing process – and that’s the attitude you have to take, which is “I’m not just keeping this stuff out of the landfill, I’m making a product”. And, you know, if you make a high quality product, obviously you can demand more price for your product.

Recycling Organics in the Middle East

EM: So Daniel, today we’re focusing on the Middle East and just specifically your project in Qatar. But before we get into that, maybe you can give us just a little background information. It seems that recycling is gaining traction in the Middle East, why do you think that is?

DM: It certainly is, I mean, organic waste is what smells and that attracts bacteria and disease. And when you got a prosperous nation like the UAE for example, you know, it’s growing. And the cost of land in using landfills or dumps is becoming very expensive and it can play a detrimental role to society, and just general health and living standards. So, what we try to do is to treat the organic waste on-site or in a collective method on a site next to, or within, the landfill or dump, therefore actually minimizing the organics that goes into the landfill or dump, which we think is a waste of resources, and turning it into compost.

EM: That’s a brilliant idea actually, that’s really cool. So they have a pressing need to recycling, I suppose. But what are the challenges you’ve seen to introducing recycling systems? I presume the notion of recycling is gaining popularity?

DM: It is, it is. There are elements and drivers, but the current practices there at the moment (and there are improvements to this) is that there’s little awareness campaigns (although this is improving), there’s very little source-separation activities, there’s minimal compost development. So, putting quality back into the soils is paramount, especially in a region that is purely desert. There’s in increase in migrant populations, so therefore, when they’re building infrastructure; roads, airports, shopping malls, there are more people producing more waste. So the economic growth in that area contributes to growth in waste generation per person. And if you look at the statistics in the Middle East, for example in the UAE or Qatar, per kg per person it’s on of the highest in the world.

EM: Wow, okay so there’s a lot of work to be done there. And you’ve been part of that work yourself in Qatar, in The Pearl which is a high-end residential and retail complex is that right?

DM: Yeah, the Pearl, which is run by UDC (the United Development Company), based in Qatar as you said, is a beautiful residential and retail complex. And people pay for prosperity, and do not want to see waste, and management are very pro-active and are always looking at ways to add value to the good work already done there.

We identified through our waste management audit, when we were asked to conduct that exercise, that there’s a huge need for landscaping, and maintaining beautiful grounds and floral settings. The Pearl imports everything –

EM: Yeah, just, because actually I remember you saying before, and I thought this was really, interesting, but they import the plants as well, do they?

DM: Yes. They’ve started to develop their own nurseries there but as you can appreciate with the weather, the extreme heat, it’s not always easy. And accessibility to good water, which is suitable for plants, is not always easy to ascertain as well. So, one of the things that we were able to do was, in example, with the workers camp there, they feed them 24/7. Their food is placed directly into the Biobin for on-site treatment. This is turned into compost, then placed onto the garden beds. So there’s less money spent on rubbish removal, importing soil conditioners and plants, and that means The Pearl can manage this themselves.

At the same time, we’ve been able to educate the kitchen staff in better practice of food waste management, and educate the staff in effective management practices in source separation methods as well.

EM: Alright, and was there any other habits that you observed that could be changed?

DM: Yeah, we found that a lot of the watering is done during the day. From an environmental perspective, it is a natural resource and it makes it very difficult when you’re watering in extreme temperatures during the day. That means the irrigation system isn’t working until it’s full at maximum, the plants are dying more readily because there isn’t conditioner in the soil, like a fetiliser. So we’ve been able to actually put the compost on there, therefore extending the lifespan of that plant, and less water required.

EM: Cool, so it saves water as well.

DM: Absolutely. It acts like a sunscreen.

EM: That’s really cool. And so did change happen in The Pearl and more generally, what do you think we can do to inspire influencers to change their systems?

DM: Well firstly, it’s about meeting people within the organisation, understanding their vision, their objectives and their values, and finding the like-minded people and objectives coming together. Secondly, the organisation has to have a strong commitment to environmental issues. And without sounding too cynical, there are many environmental policy statements on all organisations in any website or any other documented policy: it’s whether they actually act on it. And thirdly it’s to make environmental, commercial and social sense.

So, leadership is required and it starts at the top, and it’s about changing their behaviour, so if you improve the task, then you improve the process, and you improve the result, which ultimately improves the performance. So very, very quickly and not in any particular order: it’s about changing culture, and policy and procedures. Everyone works to a task and duty, so if you change that task and duty to make it more effective, more efficient, and more aligned to environmental practices, then you improve the results and the performance. Apart from education and training, you have to look at current plans in place for growth and development, so therefore it’s not just a gimmick; it’s part of everyday use. And with that everyday use, that becomes part of the culture of the organisation, and then that sends a powerful message across the rest of the organisation or the complex that it’s a standard that you’ve developed. And you never go back.

EM: Awesome. So, after the Qatar project – or you’re still involved in the Qatar project aren’t you?

DM: Yeah. We go as regular visitors there in Qatar, and we’ve ascertained new clients, and these are catering companies and food processing plants as well. Because what they do is, a large part of their business is producing food waste, and that food waste is something that we could put back into the ground. And at the moment what their doing is, they’re stopping their work, getting transport companies to pick up the bins and the skips, and they’re paying them to drive across the country to actually dump. We’re saying that you don’t need that. If you eliminate the unnecessary practices and develop new ones, you’d be surprised at the results you can achieve.

And in Qatar, especially for The Pearl, we’ve allowed them to enhance their landscaping services, for example, there’s cost savings in labour and products, there’s been training for staff, there’s efficiencies introduced in water usage, and greater yield of plant as I’ve discussed earlier. The dying plants don’t need to be disposed of; they can go into the Biobin. Planting is more effective and more efficient, in the sense that you’ve already got quality in the soils to work with. There’s less need and requirement for watering because of compost. And we’re able to demonstrate the sustainability loop.

So it’s been more of a win-win and a “win-win” as we’re there doing the work. The more we understand the client, the more we understand their current practices, we can actually introduce new methodologies based on their local circumstances, and therefore fit into their practices. And it’s actually worked in a wonderful way for mutual benefit.

EM: Brilliant. And how important, then, is understanding business culture, to making recycling a popular choice?

DM: It’s very important because decisions in business should be based on data and fact, especially in relation to waste and environmental…many businesses initially don’t know how things are spent. They have beautiful budgets, they have beautiful accounting and financial systems, but if you ask them to break down the frequency of the use and the spending habits, and asking “why”, it’s very, very different. So, business culture should be part of a process of imporvement – an improvement culture. As I said earlier it’s first to understand the problem and then make improvements.

If you have a methodology of measuring and reporting waste levels, this further promotes engagement. So, you’re using the standardised methodologies at a business or a workplace level, to allow targeted analysis and prevention. That means if you have data and facts in front of you, you are a much more informed decision-maker, and it can be driving by the establishment of waste prevention targets. At the moment, a lot of places we visit don’t have targets at all, because they don’t know that there is a…or, they know that there’s a problem – that’s why they’re talking to me – but they don’t know that we can actually dissect it, and then try and put in some new technologies and methodologies.

EM: And what role should local governments play in driving change in this part of the world?

DM: Well one of things we’ve been able to do with our success, at a local level, is allow government and relevant stakeholders to play a pivotal role. They’re also talking about laws being introduced to ensure organic waste is handled in a responsible manner. And that’s a very general term, “being responsible”. It has to be better than what’s happening at the moment. There are laws and regulations, but they have to be enforced and monitored as well. So, we’ve been able to change a bit of habit and behaviour accordingly. And that’s been wonderful for us in the last ten months.

EM: Wow, that’s really cool, that’s really inspiring. And finally, do you have a quick word of advice for our listeners in similar situations?

DM: Yeah, certainly, I mean it’s not so much as a sales gimmick or a slogan, but you know, if you have a look at what we take from the ground, we should it back in the ground. When I do work in India, for example, Mother Nature allows trees at a certain time to lose their leaves. So in India what they do is they gather up the leaves and they burn them. In the end of the day, those leaves play an important role when they fall back to the ground and when you put them on soils because they act as a natural sort of remedy for the soil to be enhanced.

And from a government-driver perspective: you cannot achieve national and economical prosperity unless you invest in community outcomes. And a cleaner environment creates growth potential for economic and community prosperity.

EM: Brilliantly said. And unfortunately that’s all the time we have for today. Best of luck in the future now, and thanks for coming on the show!

Generating Biogas in Developing Countries

Hi there once again and welcome to the show. As always, I’m your host Eleen Murphy and today we’re in the Netherlands, talking to director and RE specialist of the Fact Foundation: Winfried Rijssenbeek. Winfried and the FACT foundation work closely with local partners all over the developing world to help set-up and educate communities about biogas systems. So for this show, we’ll be focusing solely on biogas in developing countries. Topics will include: the types of organics used for production, why biogas systems are not yet a staple in developing countries, and framing biogas as more than just a source of energy.

EM: So the FACT Foundation provides biogas solutions for communities in developing countries, but also provides training, knowledge and support. You have partners across the globe that you work with, and you’re based in the Netherlands, is that correct?

WR: That’s correct. And there’s the Wageningen University, it’s the Agricultural University of the Netherlands and it’s quite well known.

EM: Right and could you tell me a little more about FACT and the work that you do?

WR: I will. We started in 2005 and this FACT Foundation was established by the late Professor Kees Daey Owens, who was first a renewable energy specialist in the Netherlands. So he found out that, yes indeed, developing countries need energy as well. So he decided to establish a foundation, and so in 2009 after Kees has ceased, we got a program developed in which we tested many different types of bioenergy projects.

EM: Cool, and what kind of things did you test?

WR: We started with bioethanol, and we looked at residues (for example cassava peels) and turning that into bioethanol so that people could have either cooking fuel or transport fuel. So we tested bioethanol, we tested biodiesel based on vegetable oils, and we also tested gasification based on wood residues, and we tested biogas. About four technologies were into our portfolio in the Deon program, and we tested that with different partners. Partners in Panama, in Peru, in Uganda et cetera, et cetera. So then, after some three years of doing this, we came to the conclusion that if there’s anything ready for a market, then it is biogas. And biogas seems to be the most easy. The most in installing it, the most easy in operating it. And this is very simple, Eleen: biogas is all about life, and it’s a biological system and to be honest, everybody who can handle a cow, can handle a biogas installation.

EM: Hm, so if biogas is such a great solution, why isn’t it more popular or well known in developing countries?

WR: Why is it not happening there? Because you have a supply and demand, and in the case of developing countries, the suppliers – they are not well informed, because they use maybe obsolete technologies or they have no updated knowledge in many cases. And on the demand side the thing is even worse because many of these people that have the production of organic waste streams, they don’t know about biogas. So they have no idea of that solution, and this is really a struggle that we have. On the one hand, the suppliers are not really customising their systems for the client. And the clients on the other hand don’t know about biogas, so we have really a task. Now, you can say, “can it pay off?” so to say; is it a good investment?

EM: That’s what I just wanted to ask: is it worth setting up?

WR: That is the interesting part. If you look at the investment, it can be expensive but you can also reduce the cost of biogas systems. For example, by using a diesel generator that you add the biogas. So you reduce your costs of buying a totally new biogas generator. The other thing is, in Germany and the rest of Europe, systems have been made for temperate climates so you have insulated bowls, they are compact because the land is expensive, so you make a compact system. Then you have to heat it because if you don’t heat it you don’t get the right temperature. Labour costs are also very expensive in Europe. So we made systems in Europe that are high investments but low operation costs. Now the funny thing is, we have a slightly different situation in developing countries for biogas.

In many countries, you don’t have these high land costs; you don’t have these high labour costs. You have other temperatures. So it makes it all different. And we can show that, in many cases, these systems can be paid off in about three to four years, and the investments – they are relatively mild, depending on the technology, but…

EM: Hmm, interesting…

WR: Yeah so, the funny thing is: how is biogas portrayed in general? And in Europe, we always say that biogas is good as a technology because you have renewable energy coming out of it. But that’s it. Now, look at developing countries: what are the basic issues over there? It’s food security. What happens is that about twenty-five percent of the food production is lost in the stream of transport and logistics, and storage. So, if you energise the food chain

in the proper way so that you have energy to cool the products, or to process, or to stir the products, then you can reduce these losses. This energy is the beauty: biogas can deliver that.

You have a resource or an organic waste stream from the agro-processing and from that you make the energy to allow this agro-processing to happen.

EM: That’s actually what I was keen to ask you as well: since you have experience in this, it would be great if you could detail the different types of organic materials you can use to make biogas.

WR: Yeah. Things that you can use is, for example, organic waste streams like from the palm oil industry. Dairy farms is another sector. All these farms, they produce manure. And, again, when there’s agriculture and forestry, there’s always waste-streams, and it depends on the composition and the availability. For example, in Uganda we know that there is a lot of lakes that is are clogged with water hyacinth. But, if the lake is fully covered with water hyacinth, really you have a problem because then fish won’t be able to grow under it because it shades the water and you get all sorts of trouble. Now, water hyacinth: if you turn that into biogas, the slurry of the water hyacinth, you can take out that slurry and use it as a fertiliser.

EM: That’s an amazing way of dealing with the problem of water hyacinth then!

WR: Right, right. So there’s that sort of thing as well. And what I just mentioned before, we always portray biogas as an energy solution, well I tell you it is much more. It is about the food security. It’s about sustainable agriculture, because people can reduce the chemical fertilser and enhance the soil quality, because this bio-slurry is very good for the soil. And finally, it’s also about sanitation. I mean, if you contaminate rivers and then later on people take water from that river – well it’s not that nice. So for sanitation purposes it’s also good.

So, it’s bringing this topic not as biogas, because if I tell about biogas only as a technology, people will say “well okay technologies, we’re not so interested – we’re interested in people”. Well, we’re talking about people, because we’re supporting food security, we’re supporting all these other benefits. If I talk about biogas only, well it will be a boring story. But if I talk about food security, and the link to the environment, and the link to all these other…sustainable agriculture, then people start to say, “hey, well damn it – this is interesting”.

EM: Excellent points. And if your opinion is that we need to raise awareness of all the benefits of biogas production – what are the things holding us back and where do we need to focus our efforts?

WR: So, this is where the story is very simple. Now, if everybody that is doing biogas is saying “No, you can do it with biogas but you should do it like this”, and the other one says, “No you should do it like that”. (If) there’s no standards, there’s no coherence in that group of alternatives, then the market, they will say: “this seems to be this, and the other one says it’s like that and you don’t know” and everybody says “okay well this is rubbish”. Now if you say – as all biogas-interested people – we form a platform and that platform sends messages always in the same form. And you explain about the advantages of biogas always in the same form, you might create a sort of advertisement to the customers that is coherent, and then maybe it will work.

Another thing is: if you’re working in a platform and you share information about your systems, again, that will help because you can learn much quicker from the other one that doing everything yourself. So, making a sort of platform is one of the things that we thought is necessary. So, the platform is basically about learning and exchanging information so that everybody has the same knowledge. And then it is about dissemination and advocacy.

EM: Aha, right…

WR: So that, basically, we said we should be doing, and in 2013, in the beginning of June, we started to launch this Global Alliance for Productive Biogas. And now we are with ninety-plus partners all around the world: in Africa, in Asia, in Latin America. And we have been talking with all these local producers, research people, associations about biogas. So we have, Global Alliance for Productive Biogas has an international board. So we have been asking our members, our partners: “okay guys, this is what we plan to do – what’s your view on this, this and this and this?”

EM: So the important thing here is that you’re working closely with the communities?

WR: Right. And it made us realise, Eleen, and this might be the interesting thing, but: we’re not alone, because we see, for example, that there are a lot of libraries. And there’re libraries about biogas. There’s a few YouTube-like things or trainings – there is people doing that and that’s also how we came in contact with the Compostory organisation. And yeah we said okay well, if you’re already doing training modules through YouTube and sort of internet videos – that’s perfect so let’s push this thing forward. That’s what we think: we have to convince many people that this is the way to go forward.

EM: Great stuff. And finally, is there any advice you’d like to give to our listeners?

WR: Yeah, I would like to say that if people want to deal with this topic, just have them go to our website, and that website is productivebiogas.org. And we invite everybody to look at the waste operators, the sewage system operators, the agro-processing cooperatives, the agro-industries, and the farmers – to have a look and see what it can bring to them.

TRANSCRIPT: 

EM: So Rokiah, I’ll start with you. Maybe you can tell us a little bit about Community By Design and the project you’re working on?

RY: Okay. Community by Design is a social interest company – community interest company – and we are currently developing anaerobic digestion on a small scale. It’s looking to make the technology cost effective at that scale and user friendly. There’s not that much of it at the moment at the very small scale and what we’re doing is to see if we can spin out as many environmental, social and economic benefits as possible all in one go. So it’s a partnership project and we’re just one of the partners, and the other partners include Methanogen who is a supplier, a research engineer from a company called Alvan Blanch, there are other engineers involved, and also Leeds University.

EM: Right, and how are you funded?

RY: We’re funded by Camden Council, and they’ve been great because they’ve supported us through the initial two years and we couldn’t have done this without them. And their objective in funding us is to see if we can generate any employment and training opportunities. So the training side of things…we’ve had quite a lot of opportunity during the build and also at all kinds of different stages of the project. And by the end of this year we hope to do a bit of economic modeling and see where we can pull the income in from to take beyond the funding. But WRAP has also funding us: WRAP are Waste and Resources and Action Program, and they’ve given us funding for the next year to do the other sites, basically.

EM: Yeah that’s really cool. And I know that some of our listeners have not yet “graduated” from compostory.org, or are beginners on the anaerobic digestion topic. Maybe you can re-detail the process so we have everyone on board here.

RY: Okay, so anaerobic digestion is a type of composting that happens without oxygen. It takes place in a sealed vessel and it can break down any organic material, except for wood: it’s the lignin in the wood that it can’t deal with. And we capture the gas that comes from it, which is about 60 percent methane, 40 percent Co2 and then some trace elements of other gasses. And the waste itself turns into a pretty liquid fertiliser: that’s what happens when we use food waste as the main feed stock. It’s a good compliment actually to compost that’s generated through an aerobic process, so they compliment each other pretty well in terms of nutrients.

EM: Brilliant stuff. And I was looking at how you use the biogas that you trap, maybe you can explain that a little bit?

RY: Oh right. So the biogas: the 60 percent of it which is methane is pretty much identical with what comes out of your mains gas, so that’s the bit that we can burn and generate heat and electricity with. It can also be used as a vehicle fuel. So we basically have got funding for the next year to set up three sites, and one of them has just been set up and been commissioned already. That one is going to be generating electricity and heat using something that looks like a boiler – it’s called a Combined Heat and Power Unit. It’s a micro-scale unit and the electricity and heat will be used for the building that we’re attached to.

At the other sites we’re going to just generate space heating, so use it as a normal space heater. And that will be in polytunnels and greenhouses. It’s quite nice because we don’t need to do anything to the gas before we do that. Some of the other sites, we’re cleaning the gas, taking out the Co2 and various other things. But the one with the polytunnles and greenhouses, you can just heat it up. The Co2 in the gas then comes out in the atmosphere and it helps plants to grow. So you get the heat, and the Co2. And then the third site is where we’re going to clean it really well, and compress it to about 200 bar or something like that and that will be used for vehicle fuel.

EM: And I was just wondering now as well, I was very curious to know how you go about collecting all the organic waste. I saw on the website that it’s bicycles that you use?

RY: Yes, that’s right, we’ve got a cargo bike. At the moment the digester that’s up and running is 2 cubic meters, it’s not massive, and it’s to demonstrate the technology can work, and we are collecting about 100 kilos a week at the moment, which is…depends on what size you are whether that’s big or small. But we’ll probably go up to about 250 kilos maximum, once we’re fully up and running. But you have to treat the digester as a stomach and keep it warm and stirred, and start to feed it slowly basically, so it doesn’t get shocked.

EM: Oh right. Okay, okay so it’s a very gentle process?

RY: Yes it is, exactly.

EM: And are businesses happy or is it businesses that you collect from, or where do you collect it?

RY: Yeah, mainly local businesses. Everything’s within a 1 mile radius area and we really want to demonstrate the benefits of doing it all very locally. And with bicycles and trailers it’s obviously zero carbon. If we had a bigger network, let’s say, we could maybe move to a small vehicle and that we could covert the engine to run on biomethane, which is the gas once it’s been scrubbed and compressed. So you then kind of would be demonstrating a closed circle within the local area with the vehicles that go out, and the signing on it.

EM: And have you got maybe an idea about how much biogas and fertiliser you can generate with a small system like this, how much it would be?

RY: Yes, yes we do. So, a 2 cubic meter system, running on food waste, you’re going to generate about twice that volume a day – that’s about 4 cubic meters of gas. And 60 percent of it being methane…that’s about 2.4 cubic meters of methane. So that’s the burnabile bit.

And I think I did some calculations a while back and it seemed to say that if you looked over a year, that system could produce enough energy for a household in terms of the gas and electricity production, using one of these CHP units. But when you look at your domestic usage of gas and electricity, it changes in the year because it’s colder in the winter obviously so you’re using more. But the digester itself would produce gas fairly constantly on a 24/7 basis, so one of the challenges is to how to manage that energy output, and how to use it when it’s summer or winter or whenever. So on each site we have slightly different solutions.

EM: That’s very cool. So where or in what context would it be beneficial do you think to roll out more of these anaerobic digestion systems, in schools maybe or? Where would be a good place to put them into?

RY: Well, we may have a school that’s interested so that’s one possibility. It would have to have space, and then it would have to have a use for the gas and you’d have to make sure that through the holidays and stuff…that there’s a use for it all through then.

We think that, having done a bit of research, the main market areas would be small businesses who produce waste. Because they have to pay for that organic waste to be taken away, it might make more sense for them to process it onsite and make use of the renewable energy and the fertiliser. Particularly if they grow things or have the chance to grow things on site. And one of our sites this year will be an organic wholefood manufacturer. So he’s got a factory with grounds, he’s a very keen permaculturalist. It’s Solara Wholefoods in Central London. And he’s already built a 50-meter forest garden, he’s got an orchard and he’s got a vineyard onsite. His digester is going to be 6 cubic meters, and that’s going to be big enough to produce enough vehicle food for his food delivery vehicle. So it’ll go around and deliver local food and run on the gas from his food waste.

So he produces enough waste…the factory produces enough waste to run that digester. And the fertiliser will be used onsite there, so it’s going to be pumped round in an irrigation system. So that will be a fantastic demonstration of closed-loop recycling.

EM: Yeah, it’s pretty perfect really.

RY: Yes it is, yeah.

EM: You said I remember, I was looking through some of your interviews on Youtube and stuff, and you mention that these very small anaerobic digestion systems are not very common here in the western world. But you would have known about…this would have been happening in other parts of the world?

RY: Yeah, so basically in the West we have quite a large number of industrial-sized digesters. And I think the incentives are mainly to do with the energy that’s produce, so there are green tariffs for the electricity or the heat that you produce using these systems.

In developing countries there are much more…many more micro-scale digesters. So they’re for maybe an individual smallholding or group of houses or something like that – similar to the scale we’re looking at. But because they tend to be in warmer climates, they need less technology, they don’t need to be heated generally. They’re often not stirred, whereas we have to keep it warm and keep it stirred and there’s other considerations in a cold climate.

So I think that what we’ve heard is that there’s more capacity in those micro-digesters in developing countries than there is in all the digesters combined in western countries. So there’s absolutely millions of digesters in China and India, for instance.

EM: That’s fascinating. And did you research about them to get started on your own or?

RY: We had a look at some of the designs, yeah. But they basically benefit because the labour there is a lot cheaper, whereas here it’s much more of the bill. And so in some cases…in China I believe they have somebody who’s trained to build these digesters and they build them into the ground – I’ve seen some built with bricks and cement, and they get the community involved in building it and that makes everything a lot cheaper.

So here, I mean it could happen in the same way here. I mean, we are developing a digester that is a lot lower cost than some of the others, just so that community groups can benefit from it. And one of the thoughts that we have is that we can troubleshoot the whole thing, get it to the point where it’s very robust and then have it is a kind of a kit that people can put together if they want so that would bring the cost right down again for them.

EM: Yeah that would be amazing.

RY: Mh-hm.

EM: So Clare, now on to you. I was very excited to read about your project Food Loop, a recycling project set up in Maiden Lane estates in London. I was especially taken by the idea of getting the community involved in the project itself. Maybe you could tell us a little more about that?

CB: Food Loop was born out of a DEFRA funded project. So DEFRA is the Department of Environment, Food and Rural Affairs. And the project was about looking into the barriers – what is it that makes it so difficult for people to separate their food waste and give it in a separated state? And we proposed to carry out this research project based on a principle that people don’t understand food waste as a resource. They look at food waste as a waste stream and they don’t see it as a resource, and if they were able to visualise that food waste is a biodegradable, natural, compostable product that turns into earth, then people would be able to associate that with the growth of new food and therefore, they would understand that it’s something precious.

We set out to explore, in very dense urban environments where food waste collection is actually very difficult, we set out to explore what the barriers were, and what might a community be able to do to in order to recycle their own food waste. This was together with Camden Council, the London borough of Camden. And the proposal was that we set up a machine to compost the residents’ own food waste, and we asked the residents to help us design a system which suited their needs. So we did that for two years: we set up the machine, a company was brought in to manage the actual collections…

We worked with the residents to design not only the communications but the whole system: how should it work, what do they thing the benefits might be…. And through talking to residents and working with them we kind of established that…we asked them what they thought would be a good idea to do with the compost. They said that they thought that it would be good to use it to – not only for growing food, we were thinking it would be about growing food – their idea was more about making the estate a more beautiful place to live.

So one of the things that came out of this project is that people who live in these, now this is quite a run-down estate, it’s quite a problematic estate and people have got more immediate problems than worrying about the environment in a wider sense. But the thing that they are very concerned about is: how they can improve their own local environment?

And now, two years down the line, it’s almost entirely run and managed by residents – volunteer residents. No one is paid, but we generate enough income. We get a little bit of money back through the North London Waste Authority, who reward community groups for biodegradable waste collection, and we sell a little bit of our product as a fertiliser and a slug repellant to urban food growers and urban gardeners.

EM: I’m just envisioning how it was when you started out and you went there for the first time and everything: how did you get the community involved – was there a lot of interest or?

CB: That’s a very good question. I think where the first issue is: how do you recruit people? Recruitment is still the most difficult thing with these projects and you need to get under the skin of the people, your primary stakeholders. Now, often the thing that is driving you, so in our case the environmental challenge of food waste, is not the thing at all which is maybe driving a resident of a housing estate.

The thing that works quite well, and I think this is a really good trick, is that we piggybacked on an event that was happening at the estate. Just when we started the project there was a barbeque event coming up on the estate. We went along to that event, and we set up a stall with a poster. All we did really was go along with a whole stall full of little tomato plants, a bucket of food waste and a bucket of compost, and just talked to people and say “did you know that your food waste can look like this one day, and then it turns into this?”. And most people were quite surprised, but it was an opportunity for us to start a conversation with them. And then we asked them if they’d like to be involved in some design work.

So lots of people actually said afterwards, you know, that they thought the design workshop was a cool thing (we were going to be designing the leaflets for the communication for this new project). So we had about 15…we had about 20 people sign up. Every time someone gave us their phone number or contact details, we gave them a tomato plant. And I think the key thing here is, if you’re recruiting, it’s to go to where people are already going to be going, and just give them a little, a little tiny reward. Just to have a first point of contact. After that we managed to get about 15 to come to our first workshop. So that was a really good way in.

We also had, which is not at all indifferent…because we were a funded research project; we also were able to give people a financial incentive. It wasn’t cash actually, but we were able to give them gardening related products when they spent a day with us in a workshop. So, it wasn’t really payment but it was again a little, little reward and that was quite lucky and I think, you know, it’s really nice to be able to give them something back.

EM: Yeah that’s a very clever point actually. That’s really cool. So Rokiah and Clare – I just asked you about your projects and now I’d like to ask the both of you: what barriers or roadblocks did you encounter when setting up? Clare you go first.

CB: Sometimes the bigger decisions take a long time, so even, for example, getting a memorandum of understanding which allowed SEED to run the project…well, we started running it anyway, but it took three months to have an actual piece of paper saying “Okay, you can run the project”.

RY: Yes, that definitely can happen. Our kind of barriers have been more in terms of legislative ones and the regulatory rules around animal byproducts in particular. So I know Clare, you’ve sort of sorted it out on your end, but we’re still a bit in limbo because the people who are deciding about anaerobic digestion at this small scale and whether or not it’s possible to distribute the digestate still haven’t really made up their minds.

So when we started the project they said, yes it’s fine to distribute, but we need an agreement with the people who are going to use it to say that they’re not going to put it near farmed animals. So we thought, okay that’s fine.  But now they’ve seemed to have changed their minds (laugh). So we’re in a slight quandary at the moment. iI’s something we hope we’re going to be able to work through, you know. It’s partly because it’s not really done that much at this scale, so everything’s a bit new.

CB: Yeah, we had similar issues, and actually we’ve only managed to have sign-off on distribution of the product (which is a critical part of the cycle, if you like)…. You can’t really make this work, this kind of project, unless you can close that loop by distributing the end product and (in theory) hopefully making some money out of it. And it’s taken us a good year and a half before we got that sorted and it’s partly as you say because the legislation is still slightly in flux and is still changing. We’ve managed to get away with quite a lot by being such a small scale that we fall under the radar.

So we, you have to…tick a certain amount of boxes, for example: you have to be producing less than a certain tonnage of compost per year, and you have to have a certain, less than a certain number of people working on the project, etc etc. And by slipping under that radar we actually have quite a degree of freedom – a much higher degree of freedom than a slightly bigger project might have like yours…

RY: Hmm…

CB: While you have the advantage of being a bigger project, in lots of ways that’s a good thing, but in lots of ways being small is an advantage too.

RY: It’s, I mean we are basically classified as the same scale as you guys, and it’s not so much to…we haven’t encountered the problems so much to do with scale, it’s more to do with the technology. So coming under the radar, we can also get the low-risk matrix position with the animal health, but because we’re not pasteurising, or we weren’t planning to, that’s the sticking point, basically. And they’re not happy for us to take it off-site at the moment. So that may change, but yeah…

And because your technology, the heat process is built in. And our process, the heat is built-in but it’s only to 40 degrees and to pasteurise it – to get it properly by animal bi-products regulations – you have to take it to 70 degrees for an hour and that kind of raises the energy costs, if you like, of the whole thing. So if we can prove we can kill off the pathogens we need to without doing that, we’re hoping that might be acceptable. But if we can’t, we might have to pasteurise, so that’s another cost on top of everything else.

EM: Right, and in a similar vein now, since this is going out to an international audience, maybe there’s some advice you might have for people who are started up something similar somewhere else? Or maybe there’s something you wish you’d known when you started out?

CB: When I started doing this stuff I really didn’t know anything about anything, and I had a hunch there was something in food waste but I didn’t really know any of the detail, or I didn’t really know where the clue was going to be. And it’s really important to do an initial phase of research. Research is really critical.

And another thing which I think is very important is not assuming that you know the answers and not being afraid to admit that you don’t have the answers, but to sort of state what you know and what you think the answers could be, and then use that as a starting point for a conversation with a whole host of experts who can set you straight.

So our project was kind of build on a vague notion: if you make the link between food waste and food-growing more evident, are people more likely to compost their food waste? That was the basic premise, and starting from there that was an idea that we visualised: our idea of getting people to collect and compost their food waste locally, and then grow things with the compost. And once we had done that we were able to use that basic visualisation as a kind of a starting point for a conversation with all kinds of different experts. Whether they were experts because they were people who lived on a housing estate, or they were experts within the local council, or whether they were from the waste management company that was sub-contracted by the council; we spoke to all these people and each of them added to our knowledge and slightly shifted our perception of what the solution needed to be. And that is a process that goes on I think continuously.

You need to continuously change and flex and adapt your thinking to accommodate your learning. But also, you know, things are in flux all the time and I think it’s about being very, very light footed and flexible and you know, keep going. You have to keep at it.

EM: Hm, that’s excellent advice.

RY: Yes, I would agree. I just probably add – and this is advice I probably don’t follow very well (laughs) but it’s really valid nonetheless: don’t try to take on too much. It’s easy to get over-complicated with things sometimes. And you’ll get a lot of positive feedback from people because it’s a concept (waste of energy, closed-loop cycles), it’s a concept that everybody intrinsically likes that, you know, makes sense to them. People don’t like waste and they don’t like waste going to waste.

I’d say…I think what the usual kind of thing, when you’re setting up a project is to look at things like how much waste you have, or how much waste can you get your hands on, and what are the logistics of that. And then what would you like to use the gas and the digestate for – and bear in mind that the digestate is as important, if not more important, than the energy when you’re talking about anaerobic digestion. So it’s not just like an add-on, it’s one of the primary outputs and it often gets a bit overlooked.

But with our kind of digester for instance, the logistics are…basically we’ve got a 2 cubic meter digester. Once we’re fully up and running we’ll be putting in roughly 40 to 50 kilos a day, and pretty much most of that will come out as digestate a day. That’s liquid digestate. So it’s a lot of stuff to use and you have to sure that you’ve got the channels to route this stuff to, otherwise you’ll end up with a lot of surplus that you might end up having to put down the drain.

So, just work on developing the networks for using it, unless you can use it on site, which is perfect. And then think about – in terms of anaerobic digestion again – think about the gas use through the seasons, so not just a one-off use. Unless it’s vehicle fuel, which you can use all the way round the year. But heating you will need less of in the summer, obviously. So you could use it instead to heat hot water for teas and coffees or cooking or something like that. It could be a different use then.

EM: Well yeah, that’s great…great advice too.

CB: Well just building on Rokiah’s point though, I do remember one funding application that we did, which was all about closed-loop recycling, and the thing that they said was…they had three things you absolutely had to have nailed down in order to get this funding: you had to know where your feed stock was coming from, you had to know and have understood how you were going to process it, and you had to know what you were going to do with the output afterwards. So I think that what Rokiah said is absolutely critical, you know, if you get stuck with a growing mountain of, or you know, a waterfall of liquid compost you’ve got a problem (laughs).

EM: (Laughs) Oh my god…

CB: And it’s quite a big problem! Yeah, but if anyone is interested in the project, I’m always very happy to take people round to see our project, so you’re very welcome to pass that message on.

EM: Yes, definitely, anyone in London or England, please go check them out!

CB: I had two ladies come from Czechoslovakia, and they have subsequently set up a composting project and they’re in touch with me, and it’s always very satisfying, you know, because they came and took notes and everything and…. We are putting together a manual now because we’re…in the end of our project the idea is that we replicate what we’re doing, so we keep on developing these small scale recycling projects on housing estates.

RY: I guess I’d like to add, the same thing again: anybody who is interested in visiting our demonstration sites near Kings Cross is really welcome, and they could tie it in with, well they could visit both sites at the same time because they’re practically within walking distance so that’s really good.

CB: Oh yeah, they’re very close to each other, I completely forgot…
